Whipped Cottage Cheese

Meet the elevated sibling to humble cottage cheese – whipped cottage cheese. Through processing or blending, you’re doing two things: turning the texture from curd to creamy and adding air for a whipped and light consistency, similar to ricotta cheese. You can use this blended cottage cheese in a savory breakfast plate like I have here, enjoy it with sweeter flavors on toast, or use it in dips, spreads, and more.

Meet the elevated sibling to cottage cheese…

whipped cottage cheese. It’s light, smooth, creamy, and absolutely delicious served both sweet and savory. 😋

The whipped version maintains the flavor of cottage cheese (and its desirable protein content) but has a smooth and creamy texture. If you don’t like the texture of cottage cheese, this might be the alternative you’re looking for!

🥣 Ultra creamy: Many people dislike the texture of cottage cheese, but the silky, spreadable texture just might change their mind!
💪 Packed with protein: A standard half cup serving of cottage cheese has 12 grams protein per serving.
Ready in minutes: Blend up a batch in minutes and enjoy it all week.
🍓 Sweet or savory: Works for all kinds of toppings. Don’t make me pick a favorite, I can’t!
🥬 Meal-prep friendly: Great to have on hand for snacks, toast, dips, and more.
🍽 Endlessly customizable: Add herbs, garlic, honey, or hot sauce right to the cottage cheese to flavor it if desired.

You’ll also want to try protein overnight oats, Greek yogurt parfait, and protein meal prep boxes.

Ingredient Notes

If you’re making whipped cottage cheese, all you need is cottage cheese! If you’re making the full savory spread, you’ll need a few more ingredients: cucumber, tomatoes, olive oil, fried egg, chili crisp oil, pita bread, salt, and pepper.

Emily’s Tips & Tricks

  • Pro tip: A high-speed blender will give you the silkiest texture, but a food processor or mini chopper works well, just scrape down the sides a few times.
  • Variations: You can serve this sweet or savory! I have serving ideas below, but I love topping it with raw veggies, a runny egg, and chili crisp (shown in pictures), spread over toast with fresh fruit or jam, or even used in place of ricotta for pizza toast.
  • Additions: If you’re going with a sweet route, add a touch of vanilla extract and a drizzle of honey to really bring out the sweetness.

Serving Suggestions

You can use this blended cottage cheese recipe so many ways! Here are a few ideas:

  • Toast – You can go sweet or savory by spreading the blended cottage cheese onto toast. Spread a layer onto hummus toast, avocado toast, or even a creamy peanut butter toast.
  • Dips – This whipped cottage cheese dip is incredibly simple to pull together and is made with pantry staples in addition to the cottage cheese. You could also swap it for the Greek yogurt in this veggie dip. It could also be delicious used in this whipped lemon feta dip – swap out the cream cheese for cottage cheese, or part of it. And I’m even tempted to try swapping it out for the cream cheese in chili dip!
  • Dessert – I’m not big on trying to turn nutritious foods into desserts, but I did see recipes for cottage cheese whipped with sugar-free jello or pudding mix. And of course, some people like to make ice cream out of cottage cheese. You could also swirl it with some jam or fruit preserves for a sweeter treat or top it with fresh fruit and a drizzle of honey, which is how I prefer a sweet version.

  3. Place fried egg on top and drizzle with chili crisp oil. Serve with toasted pita bread for scooping.

Notes

  • Storage: Store blended cottage cheese in an airtight container in the refrigerator for 3-4 days.
  • Ingredient notes: I prefer to buy and use full-fat cottage cheese (and dairy in general) as I feel it has the best flavor and is most satisfying; however, you can use any type of cottage cheese that you like.
  • Prep ahead: Brew coffee in advance and reheat if needed, but froth milk fresh for the best texture.
  • Special tools: I love making up a batch in my mini chopper attachment of my immersion blender
  • Serve with: Spread on toast with a drizzle of honey or jam and fresh fruit, or make it into a dip.

FAQs

Is whipped cottage cheese the same as ricotta?

I do find it to be very similar, so much so that I would say you could use it interchangeably, and it’s why I recommend using the cottage cheese with any of the ricotta toast toppings.

Is whipped cottage cheese good for you?

Given my nutrition AND Intuitive Eating background, I tend to say everything is healthy! 🙂 Some foods are more nutritious than others, but all food serves a purpose. A standard 1/2 cup serving of cottage cheese has 13g of protein, 5g of carbs, 5g of fat, 110 calories, and zero added sugars. Because health is so individualized, it’s hard to say if this is good for YOU, but it certainly is a nutritious food in my opinion.
