  • Fig Ricotta Toast – ricotta, thinly sliced figs, drizzle of honey, chopped walnuts

Use whole milk ricotta for the best flavor and creamy texture. If you want to turn it into whipped ricotta, simply process it in a food processor or small chopper until it’s smooth. You could also use whipped cottage cheese instead of the ricotta for a similar flavor and texture.

Ingredients

  • 2 slices of artisan bread like sourdough
  • 1/2 cup ricotta cheese
  • fresh berries
  • honey

Instructions

  1. Whip ricotta in a food processor or mini chopper until smooth. It’s an optional step but makes it super creamy and delicious!

  2. Toast bread in a toaster or on a grill pan. 
  3. Spread toast with ricotta cheese and top with fresh berries and a drizzle of honey.

Notes

Storage: Store leftover ricotta in an airtight container in the refrigerator for up to 5 days. Keep toppings separate and assemble toast fresh to prevent sogginess. 

Ingredients: Full-fat ricotta gives the best flavor and creaminess. For dairy-free options, try cashew ricotta or almond ricotta. Use sturdy bread that won’t get soggy – sourdough, artisan breads, or even bagels work great.

Prep ahead: You can whip the ricotta up to 2 days in advance and store it covered in the fridge. 

Serve with: Fresh fruit on the side, breakfast sausage or bacon for extra protein, a latte or cappuccino for a complete brunch spread, or a simple green salad for lunch.
