Trader Joe’s carne asada with pepper & corn salad is a quick and easy recipe that requires only a few ingredients from – dinner’s ready in 20 minutes!
Welcoming a new baby into the world is just amazing. There is no denying it.
It’s also exhausting, it feels crazy at times, and trying to figure out your new family dynamic can be tough.
And it’s definitely a time when no matter how much you love or care about food, it takes the backseat. Meals need to be quick and hearty.
But full disclosure: for the last two weeks I’ve leaned on others and haven’t spent much time in the kitchen. Friends and family have brought meals over (amazing!), and my parents have been cooking for us, doing laundry every day, and running Demi to and from preschool. Don’t ever leave!!!
Soon we’ll be on our own, and while we ease back into a somewhat normal life, it’s the perfect time to rely on easy meals that come from a handful of Trader Joe’s ingredients.
The purpose of these trader joe’s recipe posts is to create meals that don’t take a lot of time, or a lot of ingredients, but that actually feel like a real meal. A meal that should be eaten on a real plate, and a meal that should definitely be paired with a glass of wine! 🙂
So here are the details! Everything comes together in about 15-20 minutes.
Ingredient List: carne asada pre-marinated meat, 1 bag of fire roasted bell peppers & onions, 1/2 bag of roasted corn, feta cheese (I love their block of feta in brine!), and fresh parsley.
Carne Asada: Follow package instructions or heat grill over medium-high heat and grill meat for about 3-4 minutes per side, or until cooked through. Thickness of meat varies, so cooking time will also vary.
Pepper & Corn Salad: Heat large sauté pan over medium-high heat. Add 1 Tablespoon olive oil to pan. When hot, add bag of peppers and onions and 1/2 of the bag of roasted corn. Sauté, stirring occasionally for about 10 minutes, until most of the liquid has evaporated. Set aside. Roughly chop 1/2 cup parsley and 1/2 cup feta cheese and toss with pepper and corn mixture.
Extras: Serve over rice or tortillas if desired. Top with hot sauce or sour cream.
