  • Pro tip: Pre-bake the naan directly on your oven rack for 2-4 minutes before adding toppings. This creates a crispy base that won’t get soggy under the buffalo chicken and cheese. It’s the difference between a perfect crispy flatbread and a sad, floppy one.
  • Feeding kids without pressure: Let kids build their own flatbreads with just the toppings they like. Some might skip the blue cheese or want less buffalo sauce. Serve plain naan bread on the side with butter, along with some milk and/or fruit for a full and balanced meal if they aren’t ready for buffalo chicken – yet!

Description

This buffalo chicken flatbread pizza recipe is made with just 6 simple ingredients and ready in 15 minutes! Let everyone top their own. 


Ingredients

  • 4 pieces of standard-size naan bread (or 8 if small)
  • 2 cups shredded buffalo chicken
  • 8 oz. shredded mozzarella cheese
  • 4 oz. blue cheese crumbles
  • 1/2 cup sliced green onions

Instructions

  1. Preheat oven to 400 degrees F.
  2. Bake naan, directly on oven rack for 2-4 minutes, until lightly crispy. ⁠⁠Remove from oven and place on a sheet pan.
  3. Top with shredded chicken (use a slotted spoon so the chicken doesn’t have too much moisture) and mozzarella cheese, additional chicken if desired, and a sprinkle of blue cheese crumbles.

  4. Bake for another 5-7 minutes until naan is golden brown and cheese is melted. Top with green onions and an extra drizzle with buffalo sauce if desired.

Notes

Storage: Store leftover flatbread in an airtight container in the refrigerator for 3-4 days. Reheat in a 375°F oven for best results to keep the crust crispy.

Ingredients: For the buffalo chicken, I recommend making a batch of slow cooker buffalo chicken, but you can absolutely use cooked chicken breast or rotisserie chicken tossed with buffalo sauce. If you’re not a blue cheese fan, substitute with cheddar or jack cheese.

Prep ahead: Make your buffalo chicken ahead of time and store it in the fridge for up to 4 days. 

Serve with: Keep it simple with a side salad like lemon kale salad, raw veggies with dip, or fresh fruit. 

Serving Suggestions

All this flatbread needs is a simple veggie side dish. Salads are an obvious star with pizzas, but veggies and dip work in a pinch, too!
