This basil pesto tomato mozzarella chicken bake is made with just 5 simple ingredients:
- Chicken breasts – Use chicken cutlets or cut a chicken breast in half lengthwise
- Sea salt and black pepper
- Pesto – Use homemade or prepared pesto
- Fresh mozzarella – Regular mozzarella will also work, but fresh is preferred
- Tomatoes – Use any type of tomato, whatever is fresh and best
- Olive oil

- Season chicken breast. Season chicken with sea salt and black pepper.
- Bake chicken and pesto. Spread pesto on each chicken breast and bake for 10 minutes. Top with mozzarella cheese and bake for another 3-4 minutes, or until chicken is cooked through to an internal temperature of 165 degrees F.

- 1 1/2 lbs. chicken cutlets (thin cut, or you can cut a breast in half lengthwise)
- 3/4 tsp. sea salt (divided)
- 1/4 tsp. black pepper
- 1/4 cup pesto
- 4 oz. fresh mozzarella
- 2 medium tomatoes
- 1 Tbsp. olive oil
- Preheat oven to 350 degrees F.
- Line baking dish with foil and spray with olive oil spritzer.
- Season chicken breasts with salt and pepper on both sides.
