Made with just chicken thighs and pesto (plus salt and pepper!), this chicken essentially cooks itself in the slow cooker, leaving you with pieces of chicken that have tons of flavor and are super juicy. Then serve these pesto chicken thighs as a part of a meal or pair with pasta or rice and a veggie like kale salad or frozen broccoli for a simple, nutritious, and delicious meal.   • Chicken – I’ve used boneless skinless chicken thighs, but you could also use boneless skinless chicken breasts cut up into small pieces if you prefer.

How to Make Crockpot Pesto Chicken

Prep. Cut chicken into 2 inch pieces and place in the bottom of slow cooker.
Season. Sprinkle chicken with sea salt and black pepper. Top with pesto sauce, spreading around to coat all chicken pieces.

Cook chicken. Place lid on crock pot and cook on low until chicken thighs are cooked through and tender. Stir in extra pesto if desired.

  • Pesto Chicken Pasta – Serve chicken alongside some pasta tossed with pesto or pesto tortellini and some grated Parmesan cheese.
  • Pesto Chicken Sandwich – Top a slice of lightly bread with warmed pesto chicken and top with fresh mozzarella cheese and broil until cheese is melty. When it comes out of the oven, top it with chopped tomatoes tossed with balsamic vinegar. This one is slightly different, but definitely inspired by this turkey pesto panini.
  • Simple Dinner – Serve crockpot pesto chicken thighs as the protein component of a simple meal alongside some rice or cauliflower rice, and a simple veggie like sautéed zucchini, haricot verts or air fryer broccoli and cauliflower.

This easy crockpot pesto chicken thighs take minutes to prep and then can be used so many ways! Try it over pasta, in a sandwich, or with rice and veggies.


Units Scale
  • 2 lbs. chicken thighs, cut into 2 inch pieces
  • 2 tsp. sea salt
  • black pepper
  • 1/3 cup pesto


  1. Place chicken thigh chunks in the bottom of a slow cooker and season with salt and pepper. Top with 1/3 cup of pesto.
  2. Cook on low for 3-4 hours or until chicken reaches an internal temperature of 165 degrees F.


  • Use prepared or homemade pesto.
