Ingredient Notes
You’ll need some fresh ingredients and pantry staples to bring this one pan sausage and peppers to the table: Italian sausages (mild, hot, or sweet), colorful bell peppers (any variety works), red onion (yellow or white work too), high-quality olive oil, Italian seasoning, garlic powder, sea salt, black pepper, and optional red pepper flakes for heat. Don’t forget to add whatever you’re serving it with – buns, pasta, marinara, etc.

Emily’s Tips & Tricks
- Pro tip: Don’t crowd the pan! This is the single most important thing for success. Spread vegetables in a single layer with breathing room, then nestle sausages on top. If your pan looks too full, use two pans or roast in batches. Crowding traps steam and makes everything soggy instead of beautifully caramelized. Slice your peppers and onions into uniform 1/4-inch strips so everything cooks evenly. And broil for 1-2 minutes at the end to get those gorgeous golden-brown edges on the sausages – just watch closely so they don’t burn!
- Feeding kids without pressure: Serve a small piece of sausage and veggies if it’s a new food and serve with a few sides you know they will eat like milk, fruit, and bread with butter.
- Additions: Top the finished sausages with marinara sauce and shredded mozzarella, then pop back under the broiler for 2 minutes for a sausage Parmesan vibe. Or add arugula to hot pan and drizzle with balsamic glaze for a spicy-sweet-tangy finish.

Notes
Storage: Keep leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a skillet over medium heat or in the microwave until warmed through.
Ingredients: Italian sausages come in mild, sweet, or hot varieties – choose based on your spice preference. You can also use chicken sausage or turkey sausage for a leaner option.
Prep ahead: You can slice the peppers and onions up to 2 days ahead and store them in the fridge. Mix your oil and seasonings ahead of time, too. When you’re ready to cook, just toss everything together and bake.
Serve with: This pairs perfectly with a simple green salad, air fryer broccoli, garlic bread, or a side of pasta. You can also serve it over cauliflower rice for a lighter meal, or stuff it into toasted hoagie rolls for classic sausage and pepper sandwiches.
