Simply prep the Italian sausage and peppers and pop in the oven for an easy meal that’s mostly hands-off. There are so many different ways to enjoy this comforting meal!

  • Bell peppers – I’ve used sweet bell peppers, but you can use any combination of sweet peppers. You could also use green peppers if you prefer.
  • Onion – I’ve used red onion, but yellow onions or white onions would also work.
  • Italian sausage – Use hot Italian sausages, mild Italian sausages, or sweet Italian sausage, depending on your spice preference. You can also use chicken sausage or turkey sausage.
  • Olive oil – Use high quality olive oil for best flavor.
  • Spices – Italian seasoning, garlic powder, sea salt, black pepper, red pepper flakes (optional)
  • Marinara sauce – Use your favorite homemade or store-bought marinara sauce.
  • Parmesan cheese – Optional, but a great addition if you’re serving the sausage and peppers with marinara sauce.
  • Hot dog buns – If you’re serving the sausage and peppers in a bun, use a hot dog, brat, or hoagie rolls.

How to Make Sausage and Peppers in the Oven

Prep ingredients. Slice peppers and onions. Mix together olive oil, Italian seasoning, garlic powder, sea salt, and pepper in a small bowl.

  • Serve over pasta. You can use white, whole wheat, gluten-free pasta, or spaghetti squash depending on your needs and preferences for an Italian sausage and peppers pasta.
  • Serve as sausage and pepper sandwiches. I like serving the sausage and peppers on a garlic toasted bun with marinara on the side or drizzled over the top.
  • Serve with a salad. Bake sausage, peppers, and onions in oven and then serve with a kale salad or 5-minute chickpea chopped salad.
  • Rice bowl. Serve sliced sausages and lots of peppers over white rice, brown rice, or cauliflower rice.

Ingredients

  • 3 bell peppers
  • 1/2 red onion
  • 5 raw (about 20 oz.) Italian sausages (any variety)
  • 2 Tbsp. olive oil
  • 1 tsp. Italian seasoning
  • 1/2 tsp. garlic powder
  • 1/4 tsp. sea salt
  • 1/8 tsp. pepper
  • 2 cups marinara sauce
  • 1/2 cup grated parmesan cheese
  • 6 buns


Instructions

  1. Preheat oven to 425 degrees F.
  2. Slice peppers and onion and place onto a large baking sheet.
  3. Mix together oil, Italian seasoning, garlic powder, salt and pepper. Drizzle over vegetables. Toss to coat vegetables evenly and place Italian sausages over veggies.ย 
  4. Bake for about 15-20 minutes, or until golden brown. You can broil for 1-2 minutes, 6 inches from broiler to brown sausage a bit.ย 
  5. Serve with buns or refer to other ideas above, along with marinara sauce, Parmesan cheese, and red pepper flakes if desired.ย
