My kids don’t love grilled cheese…
…but the chances are better if they get involved!
And this method is perfect for letting everyone build their own sandwich, bake them all , and enjoy (hopefully). 🙂 It’s…
🙌 Totally hands-off: No standing over the stove flipping sandwiches one at a time – just pop them in the oven.
⏰ Ready in 10 minutes: From assembly to golden, melty perfection in less time than it takes to make them individually.
🧀 Completely customizable: Everyone builds their own with their favorite cheese combinations.
👨👩👧👦 Perfect for feeding crowds: Make 4, 6, or 8 sandwiches all at once on a single sheet pan.
💰 Budget-friendly: Use up random bits of cheese from your fridge, it’s a great way to use up smaller bits of cheese.

Ingredient Notes
You’ll need some fresh ingredients and pantry staples to bring this easy baked grilled cheese to the table: bread (white, wheat, sourdough, or artisan), softened butter or mayonnaise, and cheese. For the cheese, you can use cheddar (white, sharp, or mild), provolone, muenster, Gruyère, or whatever you have in your fridge.

Emily’s Tips & Tricks
- Pro tip: Preheat your sheet pan in the oven while it heats up—this helps create that crispy, golden bottom crust just like you’d get in a skillet. The hot pan makes all the difference in getting that perfect crunch.
- Feeding kids without pressure: Let them build their own sandwiches so they choose their cheese and any add-ins. I also serve the components deconstructed (as in slices of bread and cheese) for kids who prefer things separate. And remember the Division of Responsibility – you decide what’s served (grilled cheese, fruit, milk), they decide what and how much to eat from what you offer.
- Additions: Cooked bacon, thinly sliced ham, or prosciutto add protein. Sautéed mushrooms and caramelized onions bring savory depth. Try a spread of pesto, whole grain mustard, or fig jam between the cheese layers. A sprinkle of garlic powder on the buttered bread adds extra flavor.

Notes
Storage: These are best served immediately while hot and crispy. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days and reheated in a hot skillet or air fryer to restore the crispness.
Ingredients: Use room temperature butter; it spreads easier and more evenly on the bread. If using mayo, any kind works, but truffle mayo or garlic aioli adds amazing flavor. For the cheese, use 2-3 different types for the best flavor, it’s a great way to use up small amounts from your fridge.
Tools: A rimmed sheet pan is essential. For even browning, use parchment paper if your pan tends to have hot spots.
Serve with: These pair perfectly with tomato soup, a simple side salad, raw veggies and Greek yogurt dip, and fresh fruit.
Serving Suggestions
This crispy baked grilled cheese is great with a simple side salad (lemon kale is a favorite at our house!), raw veggies with Greek yogurt dill dip, and/or some fresh fruit.

FAQs
Absolutely! Sourdough, Italian bread, ciabatta, multigrain, or even thick-sliced white bread all work great. Just keep the slices roughly the same thickness so they bake evenly.
Yes! Air fryer grilled cheese works beautifully. Cook at 370°F for 4-5 minutes, flip, then cook another 3-4 minutes until golden and the cheese is melted. You may need to work in batches depending on your air fryer size.
Use good melting cheeses like cheddar, Gruyère, provolone, or Muenster. Shred or thinly slice the cheese so it melts faster and more evenly. Don’t overfill – too much cheese can prevent even melting.
