You’ll need some fresh ingredients and pantry staples to bring these slow cooker party potatoes to the table: refrigerated diced hash brown potatoes (the kind near the eggs in the dairy section), thinly sliced green onions, condensed cream of chicken soup, melted butter, sour cream, garlic powder, sea salt, black pepper, and shredded sharp cheddar cheese.

  • Diced potatoes: I love using refrigerated hash brown potatoes that are ready to cook as a smart shortcut. They are usually found in the refrigerated section near eggs and dairy. Frozen potatoes will also work; they need to be thawed before using. You can also peel and cut your own potatoes if you prefer, but par-boil them so they cook faster. The refrigerated potatoes are partially cooked, so they will cook faster.

Emily’s Tips & Tricks

  • Pro tip: The age of your slow cooker is important! Newer models from the last 10 years cook food much faster than the older models because they cook at a significantly higher temperature. This recipe has been tested with a newer model, so if you’re using an older model, you’ll want to account for some extra cooking time. I did a side-by-side test with a newer model cooking on low heat and an older model cooking on high heat and the newer model was still done faster, despite cooking on low. If using an older model, I would plan on the potatoes taking 6-8 hours on High.
  • Shortcuts: Use pre-shredded sharp cheddar cheese to save time. Refrigerated diced potatoes are already a huge shortcut. They’re partially cooked so they’re ready much faster than raw potatoes. If you can’t find them, frozen hash browns work too (just thaw and drain first).
  • Additions: Stir in some frozen peas or broccoli florets during the last hour for extra veggies. Top with crispy fried onions or crushed crackers in the last 30 minutes for a crunchy topping. A sprinkle of fresh chives or parsley before serving adds a nice pop of color.

  • 1/4 cup melted butter
  • 1/2 cup sour cream
  • 1 tsp. garlic powder

  • 1/4 tsp. black pepper
  • 2 cups sharp cheddar cheese

Instructions

  1. Prep ingredients:
    Thaw potatoes if frozen and drain any excess moisture.
    Thinly slice green onions.
  2. Add the soup, melted butter, sour cream, garlic powder, sea salt, and black pepper to the slow cooker and whisk together.

  4. On a newer crockpot, cook on Low for 4-6 hours or High for 3-4 hours, or until potatoes are tender.*

Notes

*The cooking times will vary depending on your slow cooker! If you have an older model (about 10+ years) the cooking time will take closer to 6-8 hours on High.

  • Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in a 350°F oven until warmed through, or use the microwave. You can also freeze these in a freezer-safe container for 2-3 months. Let thaw completely in the refrigerator overnight before reheating.
  • Ingredients: Refrigerated diced potatoes are near the eggs and dairy cases. If you can’t find them, use frozen hash browns (thawed and drained) or peel and dice fresh potatoes into 1/2-inch cubes (parboil 5-7 minutes first). Cream of chicken soup is preferred over cream of mushroom for flavor, but use your preference.
  • Prep ahead: You can assemble these the night before, mix everything in the slow cooker insert, cover it, and refrigerate overnight. In the morning, just place the insert in the slow cooker base and turn it on. Add an extra 30 minutes to cooking time if starting from cold. You can also prep all your ingredients separately and store them in the fridge, then assemble quickly before cooking.
  • Serve with: These are the perfect side for glazed ham, roast turkey, spatchcock chicken, prime rib, or turkey meatloaf.
