🍹Lightly sweet, a little spicy, and totally refreshing.

I’m often disappointed by the balance of mocktails, but not with this one! It’s layered flavors make it delicious and more complex than juice or ginger beer all on its own! It’s…

🍍 Bright & tropical: Sweet pineapple juice and fresh lime create a seriously vibrant flavor combination.
🌿 Fresh & aromatic: Muddled mint adds a cool herbal note that makes every sip feel extra special.
🔥 Bold & spicy: High-quality ginger beer brings real heat and complexity – this isn’t your average soda.
⏱️ Ready in 5 minutes: Mix, shake, pour, done – this one comes together faster than you can set out glasses.
🥂 Perfect for entertaining: Looks and tastes impressive but couldn’t be simpler to pull together for a crowd.

If you love fun non-alcoholic drinks like this, you’ll want to try my mojito mocktail for another fresh mint favorite, the margarita mocktail when you’re craving something citrusy and tart, or the cozy cranberry spritzer with rosemary for a gorgeous holiday option.

Ingredient Notes

You’ll need some fresh ingredients and pantry staples to bring this ginger mocktail recipe to the party: fresh mint leaves, fresh lime juice, simple syrup (store-bought or homemade with equal parts sugar and water), 100% pineapple juice, ice cubes, and ginger beer (Fever-Tree and Reed’s are great options – look for strong ginger flavor, not ginger ale). Garnish with dehydrated pineapple slices and a fresh sprig of mint.

Emily’s Tips & Tricks

  • Pro tip: Muddle the mint with the lime juice – not just the mint alone. The acid in the lime juice helps extract the mint oils more efficiently, which means you get a brighter, more aromatic flavor in every sip. Don’t over-muddle or you risk releasing bitter compounds from the stems; about 10–15 gentle presses is all you need.
  • Variations: Swap the ginger beer for ginger kombucha for a probiotic-friendly version with a pleasant tangy note. Because kombucha is already slightly fizzy, pour it gently over the drink rather than shaking it in the cocktail shaker.
  • Additions: A splash of club soda stirred in at the end will mellow out the ginger heat or sweetness levels.

Muddling mint and lime juice in a glass.
  2. Add in pineapple juice, and ice. Cover and shake for 30 seconds.
  3. Fill a glass with ice cubes and strain the cocktail into a glass.

  4. Top with ginger beer and garnish with fresh mint and a dehydrated pineapple slice.

Notes

Ingredients: Ginger beer is non-alcoholic despite its name, but check the label if you’re unsure. Brands like Fever-Tree and Reed’s are alcohol-free and great options.

Prep Ahead: To batch this for a party, muddle mint in the bottom of a pitcher, add lime juice and pineapple juice, and refrigerate for up to 4 hours. When ready to serve, pour over ice and top individual glasses with ginger beer.

Tools: A muddler and cocktail shaker make this easiest, though you can muddle in a tall glass and stir instead of shake in a pinch.

Serve With: Pair this mocktail with whipped feta dip, smoked salmon dip, or steamed old bay shrimp for an easy entertaining spread.

Serving Suggestions

This pineapple ginger beer mocktail is practically made for a spread of appetizers. The bright citrus flavors are a natural match for shrimp ceviche – both have that fresh lime-forward punch that just works together. Whipped feta dip with pita and veggies is another crowd-pleaser that balances the spicy ginger notes beautifully, and smoked salmon dip rounds things out and is always a big hit.

FAQs

Can you get a non-alcoholic ginger beer?

Yes! Ginger beer, while it sounds like an alcoholic beverage, it is actually non-alcoholic. Double-check the label to be sure!

Are ginger beer and ginger ale the same thing?

No, ginger beer and ginger ale are slightly different, but very similar drinks. Ginger beer has a much stronger ginger flavor, making it great in mocktails, and ginger ale has a more subtle ginger flavor.

Can I make a big batch of this for a party?

Absolutely! Muddle the mint in the bottom of a large pitcher, then add the lime juice and pineapple juice. Refrigerate for up to four hours. When guests arrive, pour the mixture over ice-filled glasses and top each one with ginger beer individually – this keeps everything nice and bubbly.
