This pineapple ginger beer mocktail is bursting with bright lime, sweet pineapple, and spicy ginger. Ready in 5 minutes with simple ingredients!
Ingredients
- 1/4 cup mint leaves
- 1 oz. fresh lime juice
- 4 oz. pineapple juice
- ice cubes
- ginger beer
- garnishes: dehydrated pineapple slice, fresh mint leaves
Instructions
- Add mint leaves and lime juice to a cocktail shaker and muddle.

- Add in pineapple juice, and ice. Cover and shake for 30 seconds.
- Fill a glass with ice cubes and strain the cocktail into a glass.

- Top with ginger beer and garnish with fresh mint and a dehydrated pineapple slice.

Notes
Ingredients: Ginger beer is non-alcoholic despite its name, but check the label if you’re unsure. Brands like Fever-Tree and Reed’s are alcohol-free and great options.
Prep Ahead: To batch this for a party, muddle mint in the bottom of a pitcher, add lime juice and pineapple juice, and refrigerate for up to 4 hours. When ready to serve, pour over ice and top individual glasses with ginger beer.
Tools: A muddler and cocktail shaker make this easiest, though you can muddle in a tall glass and stir instead of shake in a pinch.
Serve With: Pair this mocktail with whipped feta dip, smoked salmon dip, or steamed old bay shrimp for an easy entertaining spread.
