Easy Breakfast Tostada Recipe

Given our family’s obsession with tostadas, I am not quite sure how it took this long to come up with a breakfast tostada recipe! While these are designed for breakfast, they really are delicious morning, noon, and night! The crunchy tostada shells are topped with a layer of refried beans, chicken sausage and egg scramble, and finished with a drizzle of zippy lime avocado sauce. You’re going to love this tostada for breakfast!

Ingredients

  • Cilantro – Use fresh cilantro for best flavor.
  • Avocado – You’ll want a ripe avocado that is soft to the touch, but not mushy.
  • Jalapeno – This adds great fresh flavor and a little spice. Adjust according to your spice preference.
  • Sour cream – The sour cream both cools the sauce a bit, and helps give it a creamy texture. Use a dairy-free sour cream for a dairy-free version or omit it completely and add a bit of extra lime juice, oil, or water to thin the sauce if necessary.
  • Lime – Use fresh lime for best flavor.
  • Oil – We’ll use a bit of oil to thin out the lime avocado sauce and a bit to saute the peppers and onions. You can use a vegetable oil like canola, avocado, or a mild flavored olive oil for both.
  • Green pepper – I recommend a green pepper here, but you can also switch it up if you prefer. Use a red, yellow, or orange bell pepper or even a poblano pepper for a little smoky flavor.
  • Onion – I’ve used a white onion, but you could also use yellow or red onion if you prefer.
  • Jones Dairy Farm Chicken Sausage – These quick-cooking sausage links are high-quality, taste amazing, and have a little more than 3 grams of protein per link. You can find them in the breakfast section of the freezer aisle at your local store.
  • Eggs – Use high-quality eggs for best flavor.
  • Tostada shells – Use high-quality cripsy tostada shells for best flavor. If you prefer, you can also make your own with corn tortillas.
  • Refried black beans – If you have a few extra moments to make your own refried black beans I would recommend it, but canned versions will also work in a pinch.
  • Cotija cheese – A sprinkle of this cheese adds one last hit of flavor, but you could also omit for a dairy-free version. Feel free to use queso fresco as well as it also crumbles easily.
  • Sea salt and black pepper

How to Make Breakfast Tostada Recipe

Prep ingredients. Warm refried beans, prep toppings, whisk eggs, slice chicken sausages.

Assemble tostadas. Top tostada shell with a layer of creamy refried beans, sausage and egg mixture, and a sprinkle of cotija cheese. Drizzle the top of each tostada with avocado lime sauce and garnish as desired with cilantro and jalapeno.

Storage Instructions

Store any leftover tostadas in an airtight container (store components separately) in the refrigerator for 2-3 days.

How to reheat

Reheat leftovers in the microwave or in a hot skillet, just until heated through.

How to Feed Breakfast Tostadas to the Whole Family

I get it, feeding kids can be tough! But following the Division of Responsibility and knowing your job and your childโ€™s job makes it SO much more enjoyable. Youโ€™ll be able to feed your kids any meal, which will help ensure that they are eating a variety of nutritious foods โ€“ with plenty of play food sprinkled in.

I would recommend serving the egg tostada family style and let everyone build their own tostada and different toppings. Serve the meal with a few items you know your kids will eat, like fruit, milk, and/or bread and butter if they don’t do tostada shells.

Description

Ingredients

For the Avocado Lime Sauce:

  • 1 cup cilantro, roughly chopped
  • 1 medium avocado, peeled and seed removed
  • 1/2 jalapeno, chopped
  • 1/4 cup sour cream
  • 1/4 cup lime juice
  • 1 Tbsp. oil
  • 1 Tbsp. water
  • 1/2 tsp. sea salt

For the Tostadas:

  • 1 Tbsp. olive oil
  • 1/2 cup diced green pepper
  • 1/2 cup diced white onion
  • 5 oz. box (10 sausages) Jones Dairy Farm All-Natural Chicken Sausage, thawed and thinly sliced
  • 6 eggs, whisked
  • 1/4 tsp. sea salt
  • 8 tostada shells
  • 15 oz. can refried black beans
  • crumbled cotija cheese
  • garnish: chopped cilantro and sliced jalapeno


Instructions

  1. Mix avocado lime sauce. In a small food processor or blender, add cilantro, avocado, jalapeno, sour cream, lime juice, oil, water, and sea salt. Process until mixture is smooth, adding more water a tablespoon at a time if necessary. Set aside.
  2. Heat refried beans, prep toppings, whisk eggs and season with salt.
  3. Heat olive oil over medium heat in a large nonstick skillet. Add green pepper, onion, and chicken sausage to the skillet. Cook 3-4 minutes, until the veggies have softened. Lower heat to low and pour whisked eggs into the skillet and slowly stir the eggs, almost continuously, until they have just set, about 1-2 minutes.
  4. Assemble tostadas. Top tostada shell with refried beans, sausage mixture, and a sprinkle of cotijia cheese. Drizzle lime avocado sauce over the top. Garnish with cilantro and sliced jalapeno.
