This breakfast tostadas recipe is brought to you proudly in partnership with Jones Dairy Farm. I’m excited to partner with them again in 2023-2024, because we’ve used and loved their products for years and they show up on our table week after week. (If you’ve ever seen my Costco hauls, you’ve seen me recommend their chicken sausages in BULK!)

This recipe features the delicious Jones Dairy Farm All Natural Chicken Sausage. When I’m looking for high-quality breakfast proteins, I choose Jones Dairy Farm because I love that they are a local family business, picky about their ingredients and methods, and most of all, because we love the way they taste. We’ve been buying these sausages in bulk for more than 8 years and I love that they take just a few minutes to prepare, making them an easy option for weekday mornings when I want to be sure everyone gets a satisfying start to their day. They are also Certified Gluten-Free, allergen friendly, antibiotic-free, and made with all-natural ingredients.

What You’ll Love About Easy Breakfast Tostadas

  • Delicious and bright flavors
  • Satisfying and nutritious meal
  • Perfect meal for weekday meals or weekend brunch
  • Easy to make
  • Made with simple, nutritious ingredients
  • Full of protein, fiber, and flavor
  • Easy to customize

  • Cilantro – Use fresh cilantro for best flavor.
  • Avocado – You’ll want a ripe avocado that is soft to the touch, but not mushy.
  • Jalapeno – This adds great fresh flavor and a little spice. Adjust according to your spice preference.
  • Sour cream – The sour cream both cools the sauce a bit, and helps give it a creamy texture. Use a dairy-free sour cream for a dairy-free version or omit it completely and add a bit of extra lime juice, oil, or water to thin the sauce if necessary.
  • Lime – Use fresh lime for best flavor.
  • Oil – We’ll use a bit of oil to thin out the lime avocado sauce and a bit to saute the peppers and onions. You can use a vegetable oil like canola, avocado, or a mild flavored olive oil for both.
  • Green pepper – I recommend a green pepper here, but you can also switch it up if you prefer. Use a red, yellow, or orange bell pepper or even a poblano pepper for a little smoky flavor.
  • Onion – I’ve used a white onion, but you could also use yellow or red onion if you prefer.
  • Jones Dairy Farm Chicken Sausage – These quick-cooking sausage links are high-quality, taste amazing, and have a little more than 3 grams of protein per link. You can find them in the breakfast section of the freezer aisle at your local store.
  • Eggs – Use high-quality eggs for best flavor.
  • Tostada shells – Use high-quality cripsy tostada shells for best flavor. If you prefer, you can also make your own with corn tortillas.
  • Refried black beans – If you have a few extra moments to make your own refried black beans I would recommend it, but canned versions will also work in a pinch.
  • Cotija cheese – A sprinkle of this cheese adds one last hit of flavor, but you could also omit for a dairy-free version. Feel free to use queso fresco as well as it also crumbles easily.
  • Sea salt and black pepper

How to Feed Breakfast Tostadas to the Whole Family

I get it, feeding kids can be tough! But following the Division of Responsibility and knowing your job and your child’s job makes it SO much more enjoyable. You’ll be able to feed your kids any meal, which will help ensure that they are eating a variety of nutritious foods – with plenty of play food sprinkled in.

I would recommend serving the egg tostada family style and let everyone build their own tostada and different toppings. Serve the meal with a few items you know your kids will eat, like fruit, milk, and/or bread and butter if they don’t do tostada shells.

Lower heat to low and pour whisked eggs into the skillet and slowly stir the eggs, almost continuously, until they have just set, about 1-2 minutes.
  4. Assemble tostadas. Top tostada shell with refried beans, sausage mixture, and a sprinkle of cotijia cheese. Drizzle lime avocado sauce over the top. Garnish with cilantro and sliced jalapeno.

  • Feel free to swap the homemade lime avocado sauce for a store-bought version to save some time.
