Ingredient Notes

You’ll need some pantry staples to bring this homemade coffee syrup: brown sugar, water, pumpkin puree, vanilla extract, and pumpkin pie spice.

  • Brown sugar: I recommend brown sugar (dark or light brown sugar will work fine) as it adds a layer of rich and caramely flavor, but you could also use white granulated sugar or coconut sugar if you prefer. Both will work. You could also use a granulated sugar alternative.

Emily’s Tips & Tricks

  • Pro tip: Simmer the syrup until it coats the back of a spoon but isn’t thick like molasses. It will thicken slightly as it cools.
  • Variations: To turn it into a pumpkin spice creamer, combine 2 tablespoons of the syrup with 1-2 tablespoons half & half. Yum!
  • Additions: Add a pinch of salt to really bring out the sweetness and flavors.

When the weather turns crisp, this cozy homemade pumpkin spice syrup recipe is a must for coffee and more! Made with just 3 ingredients.


Ingredients

  • 1 cup packed brown sugar
  • 1 cup water
  • 1 cup pumpkin puree
  • 1 Tbsp. vanilla extract
  • 1 tsp. pumpkin spice (more if you like a stronger spice flavor)

Instructions

  1. Bring sugar, water, and pumpkin puree to a boil in a small saucepan. Remove from heat, stir in vanilla and pumpkin pie spice, and let cool before transferring to a glass jar.

  2. Store in the refrigerator for up to two weeks.

  3. Stir before using. 

Notes

  • Each serving size is 2 tablespoons; there are about 16 servings
  • For an average 8 oz. drink, you’ll want to start with a tablespoon of syrup (or two if you like a sweeter drink with more pumpkin flavor) and then adjust accordingly
  • Storage: Store in the refrigerator for up to 2 weeks in an airtight glass jar or bottle. The syrup may separate slightly – just stir before using. Can be frozen for up to 3 months in ice cube trays for single-serving portions.
  • Ingredient notes: Use pure pumpkin puree, not pumpkin pie filling. Libby’s is a reliable brand that’s pretty easy to find. Pure vanilla extract will give the best flavor.
  • Helpful tools: Medium saucepan, whisk, fine-mesh strainer (optional for ultra-smooth texture), glass storage jars. 
  • Serve with: Coffee, lattes, hot tea, pancakes, waffles, vanilla ice cream, fall cocktails, or drizzled over yogurt and granola.

Of course! It’s quite easy to find coffee syrups – Torani pumpkin spice syrup is a popular one that is used in many coffee shops, lasts a long time, and comes with a handy pump. Monin is another popular brand that has a pumpkin spice syrup.

What is Starbucks’ pumpkin spice syrup made of?

Sugar, condensed skim milk, pumpkin puree, contains 2% or less of fruit and vegetable juice for color, natural flavors, annatto, salt, potassium sorbate.

How much sugar is in this pumpkin spice coffee syrup?

The full nutrition stats can be found below the recipe card, but this syrup has about 13 grams of sugar per 2 tablespoons. For comparison, the Starbucks pumpkin syrup has about 20-26 grams of sugar per 2 tablespoons or two pumps – this is a rough estimate, it’s hard to find the exact stats so I did my best.
