Easy to make, this pumpkin spice coffee syrup can be made with just three ingredients (no artificial flavors needed) and used in a variety of ways – far beyond coffee drinks.
Making your own pumpkin spice sauce at home is surprisingly easy and has the best flavor that’s delicious in a copycat Starbucks psl latte of course, and also delicious in pumpkin cold foam if you want fall vibes but don’t have the fall weather to go along with it. Pair with mini pumpkin muffins for the perfect morning treat.

Ingredients
- Brown sugar – I recommend brown sugar (dark or light brown sugar will work fine) for this pumpkin spice syrup for coffee as it adds a layer of rich and caramely flavor, but you could also use white granulated sugar or coconut sugar if you prefer. Both will work. You could also use a granulated sugar alternative.
- Water – This is the base of the simple syrup mixture.
- Pumpkin – We’re using canned 100% pumpkin. Pumpkin pie mix could be used, but you would need to adjust the amount of sugar, so I would recommend pure pumpkin.
- Vanilla – This enhances the sweet flavors in the syrup. You can use vanilla extract or vanilla bean paste, which is what I recommend in the sweet cream cold foam.
- Pumpkin pie spice – This blend of warm fall spices includes cinnamon, ginger, nutmeg, allspice, and cloves. I use a premade mix to keep it easy, but you can easily make your own blend as well.

Here are the ingredients right from the Starbucks website:

- 1 cup water
