15-Minute Tortilla Pizzas

Ever have those nights when you need a quick dinner and have nothing in the fridge? Or maybe you’re craving pizza but you’re short on time (and dough!). This tortilla pizza recipe is just what you need! Light, crispy, and endlessly customizable, these personal pizzas are ready in minutes and ideal for busy weeknight dinners, after-school snacks, or even easy lunches at home.

These started as a girl dinner and now are a family dinner.

It’s one of those meals that stands the test of time. When I originally started making these (in my downtown apartment 20 years ago!), I was after a lighter version of pizza that could be made with minimal ingredients.

I continue making them because they’re easy, delicious, and the best way to use up random ingredients you have in your fridge!

🛒 Made with simple ingredients: Just tortillas, sauce, cheese, and your favorite toppings, this is the type of meal that can be made without much prep, planning, or a trip to the store.
😋 Seriously delicious: Crispy edges, melty cheese, and perfectly seasoned toppings – who doesn’t love pizza night!
Fast & easy: Ready in under 20 minutes from start to finish.
🍕 Kid-approved: This is a great meal to get kids involved with. Have everyone top their own pizzas.
🌱 Flexible: Swap toppings based on what’s in your fridge, it’s a great way to use up odds and ends and bits of cheese, olives, veggies, etc.
💡 Customizable: Add spices, drizzle with olive oil, or top with salad greens for a gourmet touch. Pesto and parmesan is a favorite combo of mine.

You’ll need some fresh ingredients and pantry staples to make these easy tortilla pizzas: large tortillas, sauce (marinara, pizza, pesto, etc.), cheese, and desired toppings.

Emily’s Tips & Tricks

  • Pro tip: Let’s talk toppings! This tortilla pizza recipe is a great way to use up almost-bad veggies. As well as small chunks of cheese, or the end of the bag of cheese or that random sauce in the back of the fridge. If you need some more toppings, stop by the salad bar at your local grocery store. This way, all of the ingredients and toppings are already chopped and ready to go and you don’t have to buy everything separately. WIN-WIN.
  • Get your kids involved: This is a great meal to let the kids get involved with! After you toast the crust, let them spread on the pizza sauce and add their toppings. They’ll love it AND get to practice some cooking skills. Serve the meal with a few items you know your kids will eat, like fruit, milk, and/or bread and butter if they aren’t pizza fans – yet!
  • Variations: Make a salad pizza! After you cook your pizza, top with dressed salad greens (chopped small for easier eating) for extra veggies, flavor, and crunch.

Tortilla Pizza Recipe

Description

These tortilla pizzas are ready in just 15 minutes and made with simple ingredients. A fast dinner idea that’s perfect for busy nights!


Ingredients

Scale
  • 48 large tortillas (flour or sprouted)
  • sauce: pizza or marinara sauce, pesto sauce, olive oil
  • cheese: shredded mozzarella cheese, fresh mozzarella cheese, feta, parmesan
  • toppings: pepperoni, chopped veggies (peppers, onions, mushrooms, spinach, sun-dried tomatoes, etc.)

Instructions

  1. Preheat oven to 400 degrees F.
  2. Prep and gather pizza toppings.
  3. Meanwhile, toast tortillas in oven until golden brown, about 3-4 minutes per side.

  4. Top with sauce, toppings, and cheese.

  5. Bake for another 3-4 minutes, or until cheese is melted.

Notes

  • Toppings: Pick up various vegetables for topping your pizza from the salad bar. They’ll be prepped and ready to use!
  • Storage: These pizzas are best eaten fresh. But you can store any leftovers in the fridge for 2-3 days. Reheat tortilla pizzas in a 375 degree F oven.
  • Ingredient notes: Use odds and ends from the fridge for toppings OR stop by your local grocery store’s salad bar and pick up some veggies that are already prepped and ready to use so you don’t need to buy everything individually. 
  • Serve with: Italian chopped salad, kale salad, and/or garlic bread
  • Nutrition: Nutrition facts are an estimate for one pizza with an 8″ tortilla, 1/4 cup pizza sauce, 1/2 cup shredded mozzarella, 1 oz. pepperoni, ~1/2 cup chopped veggies

It’s time to talk toppings! I have a BIG shortcut for you when it comes to toppings that you’ll want to take advantage of.

  • Mushrooms
  • Green peppers or any bell peppers
  • Red onion or white onion
  • Greens like spinach or arugula
  • Artichoke hearts
  • Olives
  • Fresh basil
  • Roasted grape tomatoes
  • Sun-dried tomatoes
  • Pineapple
  • Cheese – anything goes
  • Meat – Pepperoni, sausage, prosciutto, salami, ham or any other protein like chicken for a bbq chicken pizza
  • Spreads – Have a random artichoke spread or mushroom pate in the fridge? Put it on pizza!

  1. I used mini tortillas instead of what was recommended but boy were they delicious! The mini ones charred up nicely for 3 minutes on each side and I used a mix of shredded cheeses, fresh basil and Hunts tomato sauce. My daughter said she liked these better than English muffin pizzas, so that is telling you something! Thanks for sharing this delicious recipe!
