Halloween week is here, and between costume planning, school parties, and trick-or-treating prep, dinner needs to be easy. This week’s meal plan is all about cozy comfort food that doesn’t add to your to-do list. Think hands-off slow cooker chicken, a cozy lasagna soup, and creamy Boursin pasta that comes together in minutes.
I’ve mixed up proteins and cooking methods so you’re not stuck at the stove every night, and we’re ending the week with a fun Halloween charcuterie board the kids can help build that includes a mix of fun and nutritious options.
PRO TIP: I like to put out some nutritious, protein and fiber-rich foods on Halloween – just as an option and nothing that I beg them to eat, but usually they’ll munch on it, along with plenty of candy.
