Healthy Israeli Breakfast Bento Box is a nutritious and filling meal, made with just 7 ingredients!

Have you ever had a Mediterranean breakfast? They are a delicious spread of savory bites, including: eggs, vegetables, breads or pita, and usually hummus. I’ve had parts of Israeli breakfasts and parts of Turkish breakfasts, and so this this Easy Israeli Breakfast Bento Box is sort of my simplified and hybrid version – and it’s perfect for breakfast or lunch!

Components in a Traditional Israeli Breakfast:

The components obviously vary a bit, but most Israeli breakfasts include a combination of:

  • Eggs: in a variety of ways (like shakshuka!)
  • Vegetable salads
  • Olives
  • Tahini
  • Smoked fish
  • Breads
  • Yogurt
  • Hummus
  • Drinks: coffee, tea, and juice

 

Components in a Turkish-ish Breakfast from Kismet:

Kismet is a small and gorgeous little restaurant in LA that was on a top priority of places to visit before we moved back to Minneapolis. I had heard about, and read about, and seen articles about, and heard about AGAIN their insane Turkish-ish breakfast. It’s basically a mandatory item on their menu. While the items change a bit according to season, here are the basics:

  • Housemade labneh: a cultured cheese spread similar to a thick yogurt
  • Seven-minute egg: perfectly jammy and dusted with sumac and Aleppo pepper (because, of course!)
  • Vegetables: usually marinated
  • Marinated olives
  • Cheese: again, marinated because it makes everything better
  • Fruit: often dates in the winter and peaches in the summer
  • Bread: sourdough barbari (a traditional Persian flatbread)
  • Salad: it is a restaurant in LA, afterall 😉

Components in my Simplified Healthy Israeli Breakfast Bento Box:

  • Hard boiled eggs: simplify the process with eggs that are ready-to-eat
  • Israeli salad: this is a healthy mix of chopped cucumber, tomato, sliced green onion, a squeeze of lemon, and a drizzle of olive oil. We had this at a restaurant in LA (not at Kismet!) and we became obsessed with this simple combo, served at breakfast. You’ve got to try it!
  • Olives: flavor, flavor, flavor
  • Pita bread: not quite as delicious as fresh flatbread, but a great option and much easier
  • Hummus: mandatory

Ingredients

Scale
  • 1 small cucumber, diced
  • 5 oz. cherry tomatoes, quartered
  • 1 Tbsp. lemon juice (about 1/2 lemon)
  • 1 Tbsp. olive oil
  • pinch of salt and pepper
  • olives (optional)
  • 2 pita breads
  • 4 Tbsp. hummus
  • 2 hard boiled eggs

Instructions

  1. Combine first five ingredients together for Israeli salad.
  2. Pack hummus in containers.
  3. Arrange remaining components in bento or lunch box.

Notes

  • This will last two days in the fridge if you want to make it ahead of time.
