How to Make Tortellini Soup with Sausage:

This easy tortellini soup with sausage comes together in one pot! (YAY for less dishes!) Here’s how to make it:

  • Prep ingredients. Dice onion, celery, and carrots. Mince garlic.

PRO TIP: If you’re a speedy chopper, you can start browning the sausage and then chop the vegetables.

  • Brown sausage. Heat oil in a dutch oven and brown Italian sausage, breaking it up with a wooden spoon.
  • Saute mire poix. Add onion, celery, and carrots to pot and stir to combine. Cook until veggies are soft.

  • Saute garlic and tomato paste. Push veggies to the sides of the pot and add garlic and tomato paste to the center. Let sizzle a bit before stirring into Italian sausage and veggies.

  • Make roux. Sprinkle flour over mixture and stir to combine so the flour coats everything and none of it is dry looking. Pour broth and crushed tomatoes in, bring to a boil, then simmer until thickened.
  • Finish tortellini soup with sausage. At the end of cooking, add in tortellini, and cook for just 2-3 minutes. Stir in heavy cream and season with salt and pepper to taste.

  • Serve with grated Parmesan cheese, red pepper flakes, and fresh basil ribbons.

What kind of tortellini should I use?

You have some options! My first choice is a spinach and cheese tortellini, but you could also use plain cheese, or really any tortellini that has Italian flavors that will work well with Italian sausage and tomatoes.

Is tortellini already cooked?

Refrigerated tortellini is a fresh pasta, which means it cooks very quickly (just a few minutes!) and you want to be especially careful to not overcook it as it will start to disintegrate.

It will take just a few minutes to heat through, which is why we are just throwing it into the tortellini soup with Italian sausage right before serving.

How to Store Leftover Tortellini Soup with Italian Sausage:

How long will tortellini soup last?

Store leftover soup in the refrigerator for 1-2 days. Because it’s got pasta, the pasta will swell and eventually get mushy.

I didn’t think leftovers would be any good, but the tortellini didn’t get as much as I imagined and the leftovers were good for 1-2 days.

Reheat in the microwave or in a saucepan, just until hot.

Can you freeze tortellini soup?

I would not recommend freezing this soup as the pasta will get mushy if you freeze/thaw/reheat it. If you want to freeze a portion of it, one option is to cook the tortellini separately and the spoon soup mixture over it for serving. Then freeze the soup mixture separately.

How to Serve Creamy Tortellini Soup to the Whole Family:

Soup can be tricky for younger kids to eat, so I always recommend serving less of the broth and more of the larger chunks. This way they can get it on the spoon without the broth spilling off. Even soup can be served for one family meal.

If you want to swap out any of the ingredients and toppings, here are a few ways you can add even more nutrition into this meal:

  • Lighter – Want to lighten up this soup a bit? Skip the heavy cream and use less pasta, it will still be filling.
  • Vegetarian – You could omit the Italian sausage for a vegetarian version, but the sausage adds a deep layer of flavor, so you may need to add some Italian seasoning and fennel seeds to make up for it.
  • Gluten-free – Skip the flour for the roux and use your favorite 1:1 gluten-free flour blend instead. Finish with gluten-free tortellini.
  • Dairy Free – You can skip the heavy cream and Parmesan to make this one pot creamy tortellini soup dairy-free. It’s still creamy from the roux, but won’t be as light in color.

Description

This tortellini soup with sausage recipe is comfort food in a bowl! Made with basic ingredients + a simple technique, it’s a family favorite!


Ingredients

Scale
  • 1 small yellow onion
  • 2 stalks celery
  • 2 carrotsย 
  • 4 cloves garlicย 
  • 1 Tbsp. olive oil
  • 8 oz. Italian sausage
  • 6 oz. tomato paste
  • 2 Tbsp. flour
  • 6 cups chicken brothย 
  • 28 oz. crushed tomatoes
  • 20 oz. tortellini (refrigerated)
  • 1/2 cup heavy cream
  • grated Parmesan cheese
  • red pepper flakes
  • fresh basilย 


Instructions

  1. Prep ingredients:ย 
    Dice onion.ย 
    Dice celery.ย 
    Dice carrots.ย 
    Mince garlic.ย 
  2. Heat olive oil in a 6 qt. Dutch oven over medium heat. Add sausage to pan and brown for about 4-5 minutes, breaking up with a wooden spoon.ย 
  3. Add onion, celery, and carrots to pot and stir to combine. Cook, stirring occasionally, for about 4-5 minutes, until veggies have softened.ย 
  4. Push the sausage and veggies to the side and add garlic and tomato paste to the center of the pot. Let sizzle and cook for about a minute, or until fragrant and then stir into the veggies and sausage and cook another minute to caramelize flavors a bit.ย 
  5. Sprinkle flour over sausage and veggies and stir to combine. Pour broth and crushed tomatoes into pot, mix well and bring to a boil. Lower heat, and simmer for about 10-15 minutes, until thickened.ย 
  6. Add tortellini to the soup mixture and cook for an additional 3-4 minutes, until cooked through. Stir in heavy cream and season with salt and pepper to taste.ย 
  7. Serve with grated Parmesan cheese, red pepper flakes, and fresh basil ribbons.ย
