Weekly Meal Plan: March 16th-20th

St. Patrick’s Day falls on Tuesday this week, and it’s the perfect excuse to make a Reuben – one of those satisfying, no-fuss dinners we always enjoy this time of year. Last summer, we tried a version with roasted beets instead of the meat, and it was so fantastic that I highly recommend it as a great swap and option. The rest of the week is full of variety and big flavor: chicken shawarma bowls, a cheesy turkey taco skillet, a quick shrimp teriyaki stir fry, and a Big Mac salad to close out the week. Whipped cottage cheese for breakfast and a bright quinoa arugula salad for lunch round out a well-balanced week that doesn’t ask too much of you.
