I love a lot about Chipotle. I love the fresh meals, good flavors, fast delivery, and the fact that I’m always pretty close to one. (Currently living one block away!) Is it authentic like the Mexican food we could get in LA? Not really, but it’s not trying to be either so it doesn’t bother me.
If you’re a super fan like me, you are going to be super excited about this recipe. I recreated a Barbacoa Burrito Bowl and it’s fantastic. I have been working on so many slow cooker recipes for my easy and healthy meal plan to be totally honest, I’ve found slow cooker beef recipes to be a tad tricky! I was really lacking some inspiration but then I had a Chipotle Barbacoa Burrito Bowl for dinner one night not too long ago, and knew that I needed to recreate it at home.
What is Slow Cooker Barbacoa Beef?
Barbacoa beef is usually a mix of various beef cuts, but in this version, I used a beef chuck roast. The meat is combined with a number of seasonings like chipotles, bay leaves, and the real secret – ground cloves! Click here for the full recipe to slow cooker barbacoa. The meat is shredded and has a smoky, slightly spicy sauce. It’s delicious and full of flavor!
I think it comes so close to the real deal because Chipotle posts all of their ingredients online, so all it took was some tinkering and I have an amazing Chipotle copycat! Especially when the barbacoa is paired with the classic lime and cilantro rice, and guacamole. It’s a new favorite.
Toppings for Slow Cooker Barbacoa Burrito Bowls
This is where it’s time to customize! I kept the toppings pretty similar to a Chipotle burrito bowl. We’ve got sweet, creamy, crunchy, and fresh. Top with some hot sauce if you like a little spice!
- Lime and Cilantro Rice: also known as the base of our slow cooker barbacoa burrito bowls. The chipotle rice is easy to make at home! See the recipe below.
- Pinto Beans: you could also use black beans if you prefer them or that’s what you have.
- Corn: so many options here. You can use frozen, canned, roasted, or even a corn salsa.
- Guacamole: make your own, buy it fresh, or even just chop up an avocado. I like to keep my guacamole really simple with a little citrus, garlic or onion, chopped cilantro, and salt. The chipotle guacamole has lime AND lemon juices, chopped red onion, and chopped cilantro.
- Shredded romaine lettuce: this adds a great crunch and bulk to the bowls.
- Sour Cream: I love a little cooling sour cream in any burrito bowl.
- Hot Sauce or Salsa: totally optional unless you love spice, and then it’s not optional. ๐

No slow cooker? I recommend getting one. They are so easy to use, versatile, and very inexpensive. My slow cooker is in our moving pod (we recently moved from LA to Minneapolis) and after a few weeks without one, I ordered this 6 qt. Crockpot brand slow cooker from amazon. (affiliate link). It’s only $40 and does everything I need it to do!

Ingredients
Cilantro Rice
- 1.5 cups dried white rice (like basmati or long grain)
- 1 bay leaf
- 2 Tbsp. lime juice (about 2 Tbsp.)
- 2 Tbsp. lemon juice (about 2 Tbsp.)
- 1/3 cup chopped cilantro
Burrito Bowl Toppings:
- half recipe of Slow Cooker Barbacoa (about 2.5 cups)
- 1 avocado mashed into guacamole
- 15 oz. can pinto beans
- 2 cups frozen corn
- 2 cups shredded romaine lettuce
- 4 oz. sour cream
Instructions
Make rice:
- Prepare rice as directed according to package instructions, but add bay leaf into pot.
Prepare toppings:
- Prepare guacamole. (Recipe here.)
- Rinse and drain pinto beans.
- Thinly slice lettuce.
- Microwave frozen corn until warm.
- Heat barbacoa until hot.
Assemble Bowls:
- Put a layer of cilantro rice into a large bowl or plate. Top with slow cooker barbacoa and toppings as desired.
