This 5-minute salad is perfect for Tex-Mex or Mexican meals like enchiladas, burritos, or quesadillas.


Ingredients

  • 1 head romaine lettuce
  • 1/2 cucumber
  • 4 oz. grape tomatoes (about 1 cup)
  • 2 cups frozen corn
  • ranch dressing

Instructions

  1. Prep ingredients:
    Wash and chop romaine lettuce.
    Thinly slice cucumber.
    Slice tomatoes in half, lengthwise.
    Heat corn for about 1 minute, until warm.
  2. Layer salads into bowls or onto plates and drizzle with ranch dressing.
