Oh how I love this In-N-Out style turkey burger! I don’t know why I didn’t share it with you earlier. When I had gestational diabetes while I was pregnant with Eden, this In-N-Out style turkey burger was on our menu on a weekly basis. It was a meal that I found completely satisfying without the carbs, so it was a great meal for us to have as a whole family – whether you’re watching your carbs or not. If you are, you can skip the bun and use some lettuce leaves (it’s messy in a good way!) and if not, use a bun.

What is an In-N-Out Style Turkey Burger?

You’ve probably heard of In-N-Out, but if not, it’s a popular West Coast burger chain that has a cult-like following and many claims that it’s the best fast food burger out there. I thought it was fine but not so amazing that I needed to deal with the drive-thru lines that always caused backups on Hollywood Blvd. to visit.

However, they are onto something with their toppings. And if you order an animal style burger, the patties come grilled with mustard (I must try this soon!) and it comes topped with grilled onions, extra pickles, and THE special sauce.

My In-N-Out Style Turkey Burger is a tad different, but it’s is topped with:

  • american cheese (burgers and eggs are the only acceptable use of melty american cheese in my opinion)
  • caramelized onions (cooked low and slow so they’re savory and sweet)
  • THE special sauce (an addictive combo of mayonnaise, ketchup, and pickles)

The toppings make for an extra-flavorful burger and ground turkey is the perfect canvas. BUT, I have a few tips when it comes to turkey burgers.

Tips for Turkey Burgers

  1. Use a blend of light and dark meat – no 99% fat free meat here!
  2. Buy the ground turkey that comes fresh from the counter, or a tray. I’ve found the ground turkey that comes in tubes is over-worked and creates a tougher burger.
  3. Don’t over-mix the meat! Gently form the turkey into a patty shape, THEN season them. See #2.

You’ll love this In-N-Out Style Turkey Burger recipe! It’s easy to make and FULL of flavor. The turkey burger is topped with caramelized onions and an irresistible special sauce!


Ingredients

Scale
  • 1 white onion
  • 1/2 Tbsp. butter
  • 6 ears of corn on the cob
  • 24 oz. ground turkey (90-93% lean)
  • 1 tsp. salt and pepper
  • 1/4 cup chopped pickles + 1 Tbsp. pickle juice
  • 1/4 cup mayonnaise
  • 1/4 cup ketchup
  • 6 slices american cheese
  • 6 leaves of lettuce
  • 6 hamburger buns
  • butter, salt, and pepper for corn

Instructions

  1. Prepare caramelized onions: thinly slice onions in half moon shapes. Heat small pan over medium heat and add butter to pan. When butter sizzles, add onions to pan. Cook, stirring occasionally, for about 20 minutes, or longer.
  2. Make corn: heat large pot of water over high heat. When water boils, add corn and cook for about 10 minutes. Set aside until it’s time to eat.
  3. Prep burgers: divide meat into 6 patties. Lightly form into patty shape, making an indent with fingers in the middle of burger. Salt and pepper both sides with 1 tsp. salt and pepper, more if needed.
  4. Mix up special sauce: in a small bowl, combine pickles, pickle juice, mayonnaise, and ketchup.
  5. Cook burgers: heat grill to medium high heat. Cook for about 4-5 minutes per side. Alternatively, heat grill pan over medium high heat and cook for about 4-5 minutes per side. (Or until an internal temperature of 165 degrees.) When burgers are done cooking, top with slice of cheese.
  6. Assemble burgers: layer lettuce on bottom bun. Top with burger and onions, and special sauce as desired. Serve with corn on the cob.

Notes

  • These burgers are fantastic in a lettuce wrap (but messy!) if you want a lower carb version.
  • Nutrition facts include burgers, toppings, buns, and 1 ear of corn.
