Ham & Pickle Roll-Up Lunch Box

Ham and pickle roll-ups are a beloved Midwestern snack, so let’s pack them up for a super simple lunch! These are a favorite at our house and as to be expected, there were opinions! (Eden likes a double layer of ham and Demi prefers a single layer. Get it right!)

Also we learned that we donโ€™t love raw broccoli (yet)!

Ingredients

  • Ham
  • Dill pickles
  • Cream cheese
  • Hawaiian rolls and butter
  • Cheese crackers
  • Raw broccoli and ranch
  • Apple slices
  • Candy

Prep Ahead

Prep broccoli if necessary by washing, drying, and cutting into small pieces.

Ingredients

Units Scale
  • 4 oz. deli ham (thinly sliced, but not super thin or it will tear)
  • 2 oz. cream cheese
  • 48 dill pickles
  • 4 Hawaiian buns and butter
  • 4 oz. cheese crackers
  • 2 cups raw broccoli florets
  • ranch dressing
  • 4 apples
  • 4 pieces of candy


Instructions

  1. Make ham and pickle roll-ups by spreading a piece of ham with cream cheese (gently) and placing pickle on the cream cheese. Roll up and slice into small pieces.
  2. Pack other components into lunch box.
