I haven’t shared an easy Trader Joe’s recipe since we moved from LA! Can you believe it? Back when we lived in West Hollywood, we were a block away from Trader Joe’s and well, we were there a LOT. Most of the employees knew us. My 18-month-old knew right where to go for samples. And I consider myself to be somewhat of a Trader Joe’s expert! I’ve tried almost everything! (Now that I’m saying it out loud…could that be considered a career?!)
Anyway, then we moved to Minneapolis and the Trader Joe’s was a little out of the way. And then, much to my delight, they opened a Trader Joe’s downtown that we can walk to! And now we’re regulars at Trader Joe’s again. The easy Trader Joe’s recipe ideas have started flowing, so I’ll be sharing more soon.
Let’s chat about today’s Easy Trader Joe’s Recipe: Harvest Chili Stuffed Delicata Squash. If you visit Trader Joe’s in the fall, then you know there is an explosion of pumpkin products. They have pumpkin EVERYTHING! The Harvest Chili is essentially a chili that’s made with black beans, butternut squash, cauliflower, sweet potatoes and pumpkin puree. It tastes like a traditional chili with a little hint of pumpkin, and definitely not pumpkin spice, don’t worry!
And delicata squash, have you had it? It’s a winter squash and it’s known for its creamy flavor and texture. It’s the perfect sized squash for stuffing, but it’s also often cut into rings and roasted. As with most squash, it’s nutritious too – a good source of fiber and potassium. 🙂 I like it because it doesn’t require peeling (I just don’t have time for that) and I think that it’s smaller size just makes it a bit more manageable. Yes, you can eat the skin!
So we have our delicata squash, harvest chili, and some shredded cheese. Three ingredients is all we need for this easy trader joe’s meal. Most of my other easy trader joe’s recipes are pretty similar when it comes to the number of ingredients and difficulty.

Easy Trader Joe’s Recipe: Harvest Chili Stuffed Delicata Squash is the perfect easy and healthy fall meal. It’s cozy, comforting, plant-based, and just three ingredients!
Ingredients
- 3 small delicata squash
- 2 cups Trader Joe’s Harvest Chili
- 8 oz. 3-cheese blend
- 1/8 tsp. salt and pepper
Instructions
- Pre-heat oven to 375 degrees F.
- Leaving whole, microwave squash for 4 minutes.
- When cool enough to handle, cut in half lengthwise and scoop out seeds.
- Season with salt and pepper. Fill with chili and top with cheese.
- Bake for 20 minutes or until cheese is golden and squash is soft.
Notes
- You can use any thick chili in this recipe.
