Protein Taco Tortilla Roll-Ups

These protein taco tortilla roll-ups take a classic party appetizer and load it with a boost of protein in the form of cottage cheese, black beans, and cheddar for a snack that actually holds you over. The filling comes together in a food processor in minutes, then it’s a roll, a short chill, and a slice – no cooking required. They’re ready in 45 minutes start to finish, and they work just as well as a game-day platter as they do packed into a lunch box.

Tortilla rollups (also known as pinwheels!) are a fun, easy party snack and just as good on a game-day spread.

But we made a few updates! I designed these to have an extra boost of nutrition with the beans and cottage cheese swap for cream cheese, which is more typical. These are also really flexible, so make them your own.

You’ll need cottage cheese (not fat-free), cream cheese, taco seasoning, black beans, sharp cheddar cheese (shred it yourself for the smoothest blend), green onion, and large burrito-size flour tortillas.

Emily’s Tips & Tricks

  • Pro tip: Shred your own cheddar instead of using pre-shredded – it melts into the filling better and tastes sharper. The 30-minute chill time lets the flavors meld and firms everything up for cleaner slices, but if you really need to eat them right away, you can skip the wait.
  • Variations: Add a slice of jalapeño to each piece for heat and crunch.
  • Additions: Mix in 1/2 cup shredded rotisserie chicken for an extra protein boost. To add a bit more color and crunch, try adding diced red pepper.

Description

A creamy cottage cheese and taco seasoning filling rolled into tortillas with black beans and cheddar – a make-ahead protein snack for parties or lunch.


Ingredients

  • 1 cup cottage cheese (not fat-free)
  • 2 ounces cream cheese, softened
  • 2 tablespoons taco seasoning (or homemade)
  • 1 cup black beans, drained and rinsed
  • 1 cup cheddar cheese, freshly shredded
  • 1–2 green onions, thinly sliced
  • 4 large flour tortillas (burrito-size)

Instructions

  1. In a food processor or mini chopper, blend the cottage cheese, cream cheese, and taco seasoning together until completely smooth, scraping down the sides as needed, about 1-2 minutes.

  2. Lay the tortillas flat on a clean work surface. Spread about 1/4 cup of the mixture evenly over each tortilla, leaving a 1-inch border around 3 of the edges and a 2-inch border on the top so the filling doesn’t squeeze out when rolled.

  3. Sprinkle the black beans, cheddar, and green onion evenly over the mixture on each tortilla.

  4. Roll each tortilla up tightly into a spiral. Wrap snugly in parchment paper or plastic wrap to hold its shape – if using parchment, twist the ends closed.

  5. Refrigerate at least 30 minutes (up to a few hours) to let the filling set – this makes slicing much easier.
  6. Unwrap and slice each roll into 1-inch pieces with a sharp knife, wiping the blade between cuts. You want these bite-sized so you can pop one in your mouth.

Notes

Storage: Ingredients keep in the fridge for 3-4 days if stored separately. Once assembled and rolled, the roll-ups are best within 6-8 hours, since the moist filling will start to soften the tortilla the longer they sit.

Ingredients: Skip fat-free cottage cheese here, unless you really prefer it. The full-fat version has more flavor, and I find it to be more satisfying.

Prep ahead: Assemble and refrigerate up to a few hours ahead. If you don’t have 30 minutes to wait, you can eat them right away, but they are better after a bit of time to let the flavors meld.

Tools: A food processor or mini chopper is what gets the filling completely smooth – a hand mix won’t get there.
