- 2 lbs. carrots
- 1/3 cup butter, melted
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 Tbsp. dried thyme
- sea salt
- black pepper
- thyme sprigs for garnish
Instructions
- Preheat oven to 400 degrees F.
- Wash and peel carrots and slice lengthwise. Depending on the size, you may need to cut in half both ways. You’ll want them about 4-5 inches long.
- Melt butter in a large bowl and then add honey, garlic, dried thyme, sea salt, and black pepper. Whisk together until combined.
- Add carrots to honey butter mixture and toss to coat.
- Transfer carrots to a large baking sheet and roast for 20-30 minutes, until carrots are tender crisp.
- Garnish with fresh thyme.
