Ingredients

- 2 red peppers, seeded and halved
- 2 medium zucchini, sliced lengthwise
- 1 eggplant, sliced lengthwise
- 2 large portobello mushrooms
- 1 bunch green onion, roots cut off
- 1/4 cup olive oil
- sea salt
- black pepper
Instructions
- Brush veggies with olive oil on both side and sprinkle with sea salt and pepper.
- Preheat grill over medium-high heat. Grill vegetables until tender and lightly charred.
- Timing:
bell pepper, portobellos: 4 minutes per side
zucchini, eggplant: 3 minutes per side
onions: 2 minutes per side
