Description

You’ll want to add this simple green salad to all of your weeknight meals! It takes just 10 minutes to make.


Ingredients

Scale
  • 4 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • 2 tsp. dijon mustard
  • 1/8 tsp. salt and pepper
  • 1 small cucumber
  • 8 oz. grape tomatoes
  • 3 green onions
  • 1 small avocado
  • 4 oz. goat cheese
  • 1 head bibb lettuce (or 7 oz. bag)


Instructions

  1. Prep ingredients:
    Mix the olive oil, vinegar, mustard, salt, and pepper into a small jar and shake until emulsified.
    Slice cucumber in half moons.
    Slice tomatoes in half.
    Thinly slice green onion.
    Cut avocado into small chunks.
    Wash and gently tear lettuce.
  2. Compile salads either on plates or on a large platter. Spread out lettuce and top with cucumber, tomatoes, green onion, avocado, crumbled goat cheese, and a sprinkle of fresh pepper. Top salad with dressing.

Notes

  • Feel free to swap out ingredients, this is a very “loose” recipe.
  • Other vinegars to try in salad dressing: apple cider, white balsamic, champagne.
