Ground Turkey Stir-Fry Recipe

Description

The whole family will love this ground turkey stir fry recipe! Ready in less than 30 minutes, it’s packed with protein, produce, and flavor! 


Ingredients

  • 3 cloves garlic, minced
  • 3 tsp. grated ginger
  • 1/3 cup soy sauce
  • 1-2 Tbsp. brown sugar (adjust to your preference)
  • 2 Tbsp. cornstarch
  • 2 Tbsp. rice wine vinegar
  • 2 Tbsp. sesame oil
  • 1 Tbsp. oil
  • 1 lb. ground turkey (NOT 99% lean)
  • 1/2 tsp. sea salt
  • 16 oz. broccoli florets
  • For serving: sliced green onion, soy sauce, sriracha/garlic chile sauce, sesame seeds

Instructions

  1. Mix up stir fry sauce. Whisk together minced garlic, ginger, soy sauce, brown sugar, cornstarch, rice wine vinegar, and sesame oil in a small bowl.

  2. Heat oil in a large nonstick skillet or wok over medium high heat. Add ground turkey to the pan and cook for 4-5 minutes, breaking up with a spatula or the back of a wooden spoon. Cook until browned.

  3. Add broccoli and mix together with turkey. Cover, lower heat to medium, and cook for 4-5 minutes. Remove cover, return heat to medium and stir in soy sauce mixture and cook for 1-3 more minutes, until broccoli is tender and sauce is thick and glossy.

  4. Serve turkey and broccoli over rice. Garnish with green onions, sesame seeds, and if desired, serve with extra soy sauce and chili garlic sauce (or sriracha) to taste.

Notes

  • Storage: Store leftover turkey stir fry in an airtight container in the refrigerator for 2-3 days. Reheat leftovers in the microwave or a hot skillet until heated through.
  • Freezer storage: You can freeze leftovers in a freezer container for up to 2 months. Let thaw before reheating.
  • Ingredient notes: You can use broccoli florets that are already prepped or cut your own. You will want to make sure your broccoli florets are all about the same size so they cook evenly.
  • Prep ahead: Prep your broccoli and mix together the stir-fry sauce (except for cornstarch) up to a day in advance. Stir in the cornstarch right before making.
  • Special tools: A rice maker is a lifesaver for stir-fry night and one of my favorite appliances. It produces perfectly cooked rice with a touch of a button.
  • Make it gluten-free: Swap out the soy sauce for tamari or coconut aminos, and this meal will be gluten-free.
  • Serve with: Rice, cauliflower rice, noodles.
