These hummus lettuce wraps are a light and simple lunch or snack! Customize them to your liking!
- 1 head butter lettuce
- prepared hummus
- 1small cucumber
- 1 bell pepper
- 4 oz. crumbled feta cheese
- kalamata olives (optional)
- baby carrots
- pita chips or crackers
- Double up lettuce leaves and spread hummus in the middle.
- Top with diced cucumber, diced bell pepper, feta cheese, and chopped olives.
- Roll up and serve with baby carrots and chips/crackers.
