Description

We are making easy black bean quesaritos! This quesadilla and burrito mashup just makes sense and is totally delicious and incredibly easy.


Ingredients

  • 8 burrito size flour tortillas
  • 16 oz. shredded cheddar cheese
  • 3 cups refried black beans
  • 9 oz. package microwavable dry rice mix (any flavor like Spanish rice)
  • 15 oz. queso blanco (or nacho cheese sauce)
  • 1 cup sour cream

Instructions

  1. Heat beans, rice, and nacho cheese sauce according to package instructions.
  2. Make quesadillas. Sprinkle 1 cup cheese on a tortilla on a microwave-safe plate and top with another tortilla. Microwave until cheese has melted, about 30 seconds.
  3. Assemble burrito. Spread 3/4 cup beans onto bottom third of quesadilla. Top with 1/2 cup rice, 1/4 cup cheese sauce, and dollops of sour cream. Roll burrito up, folding in the sides.
