Turkey Meatloaf

This healthy turkey meatloaf recipe is proof that comfort food can be both healthy and hearty! This lighter take on classic meatloaf also has some (not-so) secret veggies mixed right in, making it a delicious way to eat some extra veggies. Itโ€™s cheesy, juicy, super flavorful, and perfect for a comforting dinner thatโ€™s easy to make and so versatile. Choose a simple veggie or two for sides (I like mashed potatoes and green beans) and youโ€™ve got a balanced dinner thatโ€™s both nutritious and delicious.

Slow Cooker Shredded Beef

This slow cooker shredded beef is the best way to make flavorful and tender pulled beef, with minimal effort. After a quick sear (which adds a layer of flavor), the slow cooker will do the rest of the cooking for you.

The beef is seasoned simply, making it a delicious base to many meals โ€“ sandwiches, tacos, or even as a main dish. Itโ€™s a great recipe to make ahead for busy weekdays, use for meal prep, or to feed a crowd.

Moo Shu Shrimp

This moo shu shrimp has everything youโ€™re looking for in a weeknight meal. Itโ€™s nutritious, itโ€™s fast (just 20 minutes), and itโ€™s totally delicious. Tender shrimp and cabbage are tossed with a savory sauce and served over rice or in thin pancakes for a more traditional option. Youโ€™ll love making this classic takeout dish at home.

Whipped Cottage Cheese

Meet the elevated sibling to humble cottage cheese โ€“ย whippedย cottage cheese. Through processing or blending, youโ€™re doing two things โ€“ turning the texture from curd to creamy and adding air for a whipped and light consistency, similar to ricotta cheese. You can use this blended cottage cheese in a savory breakfast plate like I have here, or enjoy it with sweeter flavors – try fresh berries with a drizzle of honey and a dusting of crushed pistachios.

Minestrone Soup

Youโ€™ll love this healthy minestrone! Loaded with vegetables (8 different ones to be exact) and beans (3 different types) this minestrone soup simmers away in a rich tomato broth and is both hearty and healthy at the same time. When you find yourself craving veggies, this is what youโ€™ll want to make and itโ€™s the perfect way to use up some veggies! Itโ€™s cozy, comforting, delicious, and nutritious on a cold day or chilly night! Serve with some garlic toast or add pasta to the veggie soup to make it ultra-satisfying.
