 Mediterranean Tortellini Pasta Salad 


This Mediterranean tortellini pasta salad recipe has the perfect combination of flavors and makes for a delicious side dish to a grilled protein or main course salad that’s perfect in the summer months.


– 20 oz. refrigerated cheese tortellini – 1 cup sliced English cucumber (about half cucumber, sliced into half moons) – 1 cup grape or cherry tomatoes (sliced in half) – 8 oz. fresh mozzarella pearls – 4 oz. thick cut salami (chopped) – 1/2 cup kalamata olives (sliced in half) – 1/2 cup pepperoncini (chopped) – 1/4 cup fresh basil ribbons See post for dressing ingredients

How to Make Mediterranean Tortellini Pasta Salad

Mix pasta salad dressing


In a large bowl, whisk together lemon zest, red wine vinegar, olive oil, vegetable oil, garlic, dijon mustard, salt, and pepper until smooth.

 Cook tortellini

Cook the tortellini in a large pot of salted water according to package instructions. Drain and rinse with cold water to stop the cooking and transfer to bowl with dressing.


Prep ingredients

Slice cucumber in thin half moons, slice tomatoes in half, chop salami, cut or break olives in half, roughly chop pepperoncini, and slice basil.


Mix pasta salad ingredients

Add the cucumber, tomato, olives, pepperoncini, and salami to the bowl with tortellini and toss together gently until combined. Garnish with basil.
