Not only is this healthy potato salad made with just a few simple ingredients, but it’s also loaded with flavor, making it a great side dish for so many meals.

Ingredients 

– 1 lb. baby red potatoes (or use whatever baby variety you would like) – 3/4 cup Newman’s Own Caesar Salad Dressing – 6 oz. green beans – 2 oz. block feta cheese – 4 oz. kalamata olives

How to Make Greek Potato Salad

Boil potatoes

In a large pot, boil potatoes until fork tender, about 10-15 minutes. Toss with some of the dressing and let cool.

 Steam green beans

You can microwave (most packages have instructions right on the bag) or steam on stove top.

Assemble salad

Add green beans, olives, and feta cheese to the potatoes and drizzle with remaining dressing. Toss to combine.
