  Easy Salmon Caesar Salad

Not only is this Caesar salad with salmon a nutritious and delicious meal, but it’s incredibly easy to make and ready in just 30 minutes, making it a perfect weeknight dinner meal.

Ingredients 

– 8 oz. baguette – 2 Tbsp. olive oil – sea salt – 3 hearts of romaine lettuce (about 6–8 cups sliced) – 1 lb. salmon filet – 1/2 tsp. sea salt – 1/8 tsp. black pepper – shredded parmesan cheese for serving See post for dressing ingredients

How to Make Salmon Caesar Salad

Make croutons

Toss bread cubes with olive oil and season with salt and pepper. Bake until golden brown and crunchy.

 Make Caesar dressing

Mince garlic and anchovy paste. In a small jar or small bowl, combine garlic anchovy mixture, egg yolk, lemon juice, dijon, and oil. Shake together until emulsified.

Pan-sear salmon

Sprinkle salmon with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat and add salmon skin side up into skillet. Cook until cooked through and flaky.

Assemble salad

In a large bowl, add romaine lettuce and drizzle with Caesar dressing.Toss gently to coat lettuce.  Top with shredded Parmesan cheese, croutons, and salmon.
