 Creamy Tortellini Soup with Sausage


This tortellini soup recipe is simple and definitely family-approved. Flavorful Italian sausage is browned with veggies and turned into a creamy tomato soup with plenty of tortellini, then topped with grated Parmesan and fresh basil.


– 1 small yellow onion – 2 stalks celery – 2 carrots – 4 cloves garlic – 1 Tbsp. olive oil – 8 oz. Italian sausage – 6 oz. tomato paste – 2 Tbsp. flour – 6 cups chicken broth – 28 oz. crushed tomatoes – 20 oz. tortellini (refrigerated) – 1/2 cup heavy cream – grated Parmesan cheese – red pepper flakes – fresh basil

How to Make Tortellini Soup with Sausage

Prep ingredients


Dice onion, celery, and carrots. Mince garlic.

Brown sausage

Heat oil in a dutch oven and brown Italian sausage, breaking it up with a wooden spoon. Saute mire poix. Add onion, celery, and carrots to pot and stir to combine. Cook until veggies are soft.


Saute garlic and tomato paste

Push veggies to the sides of the pot and add garlic and tomato paste to the center. Let sizzle a bit before stirring into Italian sausage and veggies.


Make roux


Sprinkle flour over mixture and stir to combine so the flour coats everything and none of it is dry looking. Pour broth and crushed tomatoes in, bring to a boil, then simmer until thickened.
