I don’t buy salads from Trader Joe’s on a regular basis, but every once in a while, when they look particularly good and fresh, I’ll grab a few for a convenient lunch.  A few weeks ago I tried one that I loved.

Today I’m here to recreate the Harvest Salad with Grilled Chicken. This is a perfect salad for summer, as it takes advantage of summer produce and is nice and light- perfect for summer lunches or dinners. Salad greens are topped with green beans, corn, hard boiled egg, white cheddar cheese and some freshly grilled chicken, all dressed with a creamy dijon dressing. YUM!

I’ll pretty much take white cheddar anywhere and any which way. I don’t really buy TJ’s salads either. While they’re tasty, they get pricey! I am a big fan of their lentil wrap though. Have you tried it?

I’m really in the mood for a good salad. This looks delicious! And I’m obsessed with corn too. 3 ears in my kitchen as we speak. 🙂

Well, you know you had me at Trader Joe’s. 🙂 I actually don’t find the cheddar that surprising – I’ve been known to add it to salads. Maybe that’s a midwestern habit I’ve picked up, maybe that’s just a function of my borderline-unhealthy obsession with cheese. Either way, looks good!

That looks really fantastic! Did you grill the corn on the cob while you were doing the chicken? Or do you have a good source for grilled corn? 🙂
    Thanks for the great recipe!

I’ve been eating a lot more salads lately now that it’s been so hot out. I think they’re the perfect appetizer for the summer.

Or in this case, it could even be a main entree with all the chicken in it!

I’ve been really like avocados lately, so I think I will dice one up and toss it into the salad as well.

Avocado and corn is one of my favourite combinations.

Yum! This looks fantastic and perfect for lunch! I really should start shopping at TJ’s more, but thanks to ironman training, I’ve been all about what’s most convenient, the co-op six blocks away!
