I’ve got a goat cheese dip recipe that’s slightly spicy, chock-full-of-vegetables and so bright and colorful to share with you today!
The recipe inspiration for this goat cheese dip comes from a favorite restaurant back in Wisconsin Dells, calledย High Rock.ย Their Gilly Goat appetizer is SO good, and I have to get it every time I visit the restaurant. And all those times I can’t visit the restaurant? I make my own (simplified!) version at home. I love when I can go out to a restaurant, and then come home and make a simplified version of a delicious meal.
In this easy goat cheese dip, peppers are sauteed with garlic and olive oil (smells SO good!) and then spooned over a log of goat cheese and scooped up with freshly sliced baguette. Or elevate your cheese platter with goat cheese topped with this dip!

Description
Spicy Pepper Spread (Goat Cheese Dip) is a vibrant, colorful, and delicious topping for goat cheese. Scoop it up with baguette slices and add some vegetables to your cheese platter.
Ingredients
- 3 bell peppers (any color combo)
- 5 cloves garlic
- 1/4 cup olive oil
- 1/4 tsp. salt
- hot sauce or red pepper flakes to taste or sweet thai red chili sauce
- large log of goat cheese (8-12 oz.)
- 1 french baguette
- 1/8 cup finely chopped parsley (optional)
Instructions
- Fine dice peppers, discarding seeds and stem.
- Mince garlic.
- Heat olive oil in large pan and when it’s hot, add peppers and garlic.
- Saute over medium heat for about 5-7ย minutes, until peppers are soft. Add more spice or salt if necessary.
- Meanwhile, slice baguette, take goat cheese out of fridge and finely chop parsley.
- Serve peppers over goat cheese and sprinkle with parsley if desired.
Notes
- If you have roasted garlic, or can make it, swap it for the fresh!

Love love love Gilly Goat! And High Rock! I lived within 10 miles of it for years and dined there weekly. So sad that I now live 1200 miles away, but I make my own version of Gilly at home and have for a long time. So glad that others have experienced its wonderfulness.
