Slow Cooker Pork Loin Gyros

Description

Turn slow cooker pork loin into an EASY pork gyros recipe! Pork loin roast in the slow cooker takes just a few minutes to prep and makes delish gyros + leftovers.


Ingredients

Scale
  • 1/2 white onion
  • 3 lb. pork loin 
  • 2 tsp. sea salt
  • 1/2 tsp. black pepper
  • 1 lemon
  • 3 Tbsp. olive oil 
  • 2 tsp. dried oregano
  • 1 cucumber
  • 1 tomato
  • 1/2 red onion
  • pita bread

Tzatziki Sauce

  • 2 cups plain greek yogurt (whole milk if possible)
  • 3 Tbsp. olive oil
  • 1 tsp. garlic powder (or 2 minced cloves)
  • 1 tsp. dried dill
  • pinch sea salt


Instructions

  1. Slice onion into half moons and lay out on the bottom of a 6 qt. slow cooker.
  2. Season pork loin with salt and pepper on all sides. Place into slow cooker on top of onions.
  3. Mix together juice from lemon (~ 2 tablespoons), olive oil, and oregano. Drizzle over pork.
  4. Cover and cook on high for 4-5 hours, or low for 7-8 hours, until it shreds easily.
  5. While meat is cooking, prep sandwich fixings:
    Slice 1/2 cucumber into thin slices and shred the other half on the side of box grater.
    Make tzatziki: mix together greek yogurt, shredded cucumber, olive oil, garlic powder, dried dill, and salt. Set aside half of the tzatziki for later In the week.
    Thinly slice red onion into half moons.
    Slice tomato.
    Lightly heat pita bread.
  6. Lightly shred pork (you don’t need it shredded, but more sliced) and assemble sandwiches. Set aside 2 1/2 cups of pork for later in the week.

Notes

  • Get your kids involved! They can: help grate cucumber, cut cucumber with kid-safe knife, mix tzatziki, assemble pork gyros. 
  • Serving tip for kids: Deconstruct things a bit if that will be easier.
