- 2 1/2 lbs. chicken thighs (skinless, boneless)
- 1 1/2 tsp. sea salt
- 2 cups quinoa
- 4 cups chicken broth
1. Add chicken to 6 qt. slow cooker. Season with salt. Pour quinoa and chicken broth over the top. Cook on high for 3 1/2 hours. *Because we don’t want the quinoa to overcook, I don’t recommend a longer cooking time.
2. When chicken and quinoa are done cooking, roughly chop chicken and mix into quinoa.
