simple strawberry pie

Almost all summer long, the taster has been requesting a strawberry pie. So I did what any good girlfriend would do and made a strawberry pie. Of sorts.

It wasn’t your typical strawberry pie. It required only a few ingredients, no baking and incorporates my favorite part of pie. Homemade whipped cream! I’ve always loved freshly whipped cream, I remember my mom freezing the bowl and beaters and then getting out that little carton that with the help of some sugar and a few drops of vanilla, turns into something magical.

I don’t have a glass bowl (hint, hint taster) and I doubt freezing plastic has the same effect but the result was just as creamy as I remember.

Simple Strawberry Pie

  • 1 Graham Cracker Crust (I used Wholly Wholesome Organic)
  • 16 oz organic strawberries, cleaned and sliced
  • 8 oz Organic Valley Whipping Cream
  • 10 drops NuNaturals Vanilla Stevia

Beat whipping cream and stevia together until stiff.

Gently fold in strawberries.

Spread mixture in the crust, garnishing with a few strawberry slices and refrigerate.

If you are like me, you will eat it right out of the pan before the taster even gets home. πŸ˜‰

    Ok… that sounds like something even I can make!! And supposedly you can do homemade whipped cream in the vitamix!! Thanks for the recipe πŸ™‚
