- Chicken thighs
- Butter
- Yellow onion
- Sea salt
- Black pepper
- Garlic
- Ginger
- Garam masala
- Curry powder
- Ground turmeric
- Cayenne pepper
- Tomato paste

How to Cook Butter Chicken in Slow Cooker:
Cooking butter chicken in slow cooker simplifies the process and that is always something I’m excited about. 🙂
- Prep ingredients. Cut chicken into 2-inch pieces, dice onion, and mince garlic and ginger.
- Saute chicken. Heat 2 tablespoons butter in a nonstick skillet and cook chicken until golden brown on all sides. Add to slow cooker.
TIP: The chicken doesn’t need to be cooked through as it will finish cooking in the slow cooker.
- Bloom spices. Add remaining tablespoon of butter to skillet and cook onions until soft, about 4-5 minutes. Add garlic and ginger and cook for another minute, until fragrant. Add spices and stir to coat onion mixture. Cook 2 minutes, until fragrant and transfer to slow cooker.
TIP: If the spices start getting dark, turn down heat.
- Cook butter chicken. Stir tomato paste and honey into chicken and onion mixture and cook on high for 2 1/2 hours, or low for 5 hours, or until chicken is cooked through and has reached 165 degrees F.
- Serve. Serve with rice of choice and simple sautéed peas.
How to Store Leftover Healthy Slow Cooker Butter Chicken:
Store any leftovers in glass storage containers for 3-4 days in the refrigerator. Reheat in the microwave or a nonstick skillet until heated through.
You can also freeze butter chicken for 2-3 months. Let thaw overnight in the refrigerator before reheating.

Ingredients
- 3 lbs. chicken thighs (skinless, boneless)
- 4 Tbsp. butter , divided
- 1 yellow onion
- 1 tsp. sea salt
- pinch black pepper
- 4 cloves garlic
- 2 tsp. ginger
- 2 Tbsp. garam masala
- 1 tsp. curry powder
- 1 Tbsp. ground turmeric
- 1/8 tsp. cayenne pepper
- 6 Tbsp. tomato paste
- 3 Tbsp. honey
- rice
- naan bread
Instructions
- Prepare ingredients: Cut chicken thighs into 2 inch pieces. Dice onion. Mince garlic. Mince ginger.
- Heat 2 tablespoons of butter to a large skillet and heat over medium high heat. Add chicken and leave undisturbed for 1-3 minutes, until golden brown. Stir and brown on all sides. Add to the slow cooker.
- Heat remaining 2 tablespoons butter in a large skillet over medium heat. When the butter foams, add onions to skillet. Season with salt. Cook, stirring occasionally, until soft, about 4-5 minutes.
- Add garlic and ginger to pan. Cook for another minute, until fragrant. Add garam masala turmeric, and curry powder to the skillet. Stir to coat the onion mixture. Cook for two minutes, until fragrant. Transfer to slow cooker. (If the pan starts getting dark and burnt, turn down heat to medium.)
- Stir in tomato paste and honey with chicken and onions and cook on high for 2 1/2 hours.
- Cook rice and naan according to package instructions.
