So. This sandwich?

SO good.

I’m starting to think no matter what the preparation is, Copper River salmon is going to be delicious. Every way we’ve eaten it so far has been absolutely perfect and this was no exception.

Avocado is mashed with pesto, spread over fresh ciabatta bread, and then topped with a luscious piece of salmon. The flavors are incredible.

It isn’t exactly the easiest sandwich to eat, but I promise that you won’t even care. The ultra-rich, plentiful good fats and food favorites completely make up for it.

Enjoy!

I’m not really that picky. My favorite brand (the name escapes me, I used to buy it in Minneapolis) was delicious but really expensive. Now, I usually buy it from Trader Joe’s.

I LOVE LOVE LOVE salmon!!!! The only time I’ve had it was at Ruby Tuesday’s and I fell in LOVE with it! It is SO good! Hopefully I’ll be able to convince my mom to get some when we hit the grocery store this next week — I really want to have it again (and my doctor says I need to focus on my omega 3’s to help with my knee, so it will be good for me in that regards). 😉

This sounds amazing! I never think of eating salmon on a sandwich and I have no idea why. Pesto sounds like the perfect spread for it.

I completely agree… Copper River salmon is fantastic no matter how it’s prepared. And, this sounds amazing! May have to make it for my pre-triathlon meal Friday night 🙂
