These Moo Shu pork wraps are a simplified twist on the Chinese dish.
- 1 Tbsp. vegetable oil
- 3 green onions
- 2 cloves garlic
- 10 oz. bag coleslaw mix (about 4 cups)
- 2 cups leftover apricot pork
- 1 Tbsp. soy sauce
- 2 Tbsp. oyster sauce
- 8 flour tortillas
- hoisin sauce
Thinly slice green onions, keeping white and green portions separate.
Lightly heat up pork in the microwave.
Heat large saute pan over medium-high heat. Add olive oil to pan and when hot, add white part of green onions and garlic to pan, cooking for about 1 minute. Add coleslaw mix to pan and cook for about 2 minutes. Add pork, soy sauce, and oyster sauce, stirring to combine and cook for another 2 minutes.
Microwave tortillas until warm and build moo shu wraps at the table.
Serve with hoisin sauce and sliced green onions.
- Make the slow cooker Asian pork first, then use these wraps as the second meal.
