My family loves Mexican food – and on any day of the week. We couldn’t possibly limit it to just Taco Tuesdays! Plus, Slow Cooker Barbacoa Burrito Bowls Tuesday just doesn’t have the same ring to it…

And one quick note about these Mexican Stuffed Sweet Potatoes: there is nothing authentic about this recipe! (Well, maybe the chipotle peppers in adobo…). My “ethnic” recipes like Easy Bibimbap Bowls or Israeli Breakfast Bento Box – they are not authentic nor are they trying to be authentic. I love authentic food experiences, but it’s just not realistic for me to cook that way at home. So I simplify with everyday ingredients and quick cooking techniques to turn these meals into an easy and approachable meal.

Baked sweet potatoes are topped with taco meat (ground beef, or turkey if you prefer) and the typical taco toppings like sour cream, avocado, tomatoes, green onions, hot sauce…it’s up to you!
Are Mexican Stuffed Sweet Potatoes Easy to Make?
YES! I create easy and healthy weeknight recipes for busy families and this is one of those recipes! It comes together in about 30 minutes, but if you really wanted a quick weeknight meal, you can also meal prep the sweet potatoes and/or taco meat ahead of time for a meal that’s ready in minutes.
Sweet potatoes are baked, and while they’re baking, we whip up the taco meat. Prep the toppings and dinner is on the table.
Are Mexican Stuffed Sweet Potatoes Healthy?
Mexican stuffed sweet potatoes are definitely a nutritious dinner that’s full of various vitamins, minerals, protein, fiber, and flavor! (That last one isn’t on the nutrition facts, but it’s part of my “healthy” meal requirements. ๐
If you’ve been around here for a while, you know that I don’t really love to use the terms HEALTHY or NOT healthy to describe food. One reason is that the word “healthy” by definition is to “possess or enjoy good health” – it’s not a definitive list of certain foods. When we label some foods as healthy and others not, it implies that some foods are good and some aren’t, and I don’t like the guilt that can come along with that classification. It’s why I consider all of my recipes to be “healthy!”

Description
Mexican Stuffed Sweet Potatoes are a 30 minute weeknight meal that’s easy and healthy. Your family will love it and it’s a perfect meal to prep over the weekend.
Ingredients
- 2 large sweet potatoes (about 12 oz.)
- 1/2 white or yellow onion
- 16 oz. ground beef (85% lean)
- 2 Tbsp. chopped chipotle peppers
- 1 Tbsp. ground cumin
- 1 tsp. smoked paprika
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 oz. shredded mexican cheese (or cheddar)
- 8 oz. grape or cherry tomatoes
- 4 green onions
- 1 avocado
- 4 oz. sour cream
- hot sauce
Instructions
- Preheat oven to 400 degrees F.
- Scrub sweet potatoes and prick all over with a fork.
- Microwave for 5 minutes. Carefully remove and rub with olive oil.
- Bake in the oven for 20 minutes, or until soft.
- While sweet potatoes are baking, prepare ingredients:
Dice onion.
Slice tomatoes in half.
Thinly slice green onions.
Chop avocado. - Heat large pan over medium-high heat. Add ground beef and onions when it’s hot, and cook, breaking up meat with spatula or back of a wooden spoon for about 2 minutes. Add chipotle peppers and all of the dried seasonings. Stir together, and cook for another 5 minutes, until beef is cooked through.
- Split potatoes in half, lightly smash and layer on cheese, taco meat, tomatoes, green onions, avocado, sour cream, and hot sauce if desired.
