These easy Greek fries utilize leftover pork along with all sorts of fresh toppings for the ultimate, loaded fries. Such a fun meal!
Ingredients

- 20 oz. frozen waffle fries
- 2 1/2 cups leftover Greek pork
- 1 cup shredded mozzarella cheese
- 1 small head romaine lettuce
- 1/2 cucumber (I prefer english)
- 1/2 diced red pepper
- 1 cup chopped tomatoes
- 1/2 cup minced red onion
- sliced pepperoncini
- leftover tzatiki sauce
Instructions

Prepare ingredients:
Pre-heat oven to cook french fries. Bake fries according to package instructions. -
Prep toppings:
Pork: heat in the microwave and drain off liquid with a slotted spoon.
Lettuce: wash and thinly slice.
Cucumber: wash and dice.
Tomatoes: wash and cut in half. -
When fries are done baking, top with cheese and chicken. Broil for 2 minutes, a few racks down until cheese is melted. Top with remaining ingredients or let everyone top their own fries with desired toppings.

Notes
- This is a cook once, eat twice meal. Make the slow cooker pork gyros and then use the leftovers in this loaded Greek fries recipe.
- Get your kids involved! They can: tear lettuce, and add their toppings to fries.
- Could use pre-shredded lettuce for this if you need to save the time.
