It’s apple season here in Minnesota, and I’m going ALL out this year. We eat them plain, dip them into the tasty creamy peanut butter apple dip, transform them into healthy baked apple oatmeal bars, and then slice them thin and pile on all the toppings.
If you visit the apple orchards, apple cider, apple cider donuts, and apple pie might be mandatory treats. But at home, I like to add a little more nutrition in when I can.
Adding a hefty drizzle of peanut butter to these healthy peanut butter apple stacks is beneficial for a few reasons. One, the combo of apples in peanut butter is THE best. I think I prefer it over peanut butter and chocolate. Is that too bold of a statement? And two, peanut butter is such an easy, nutrient-dense, affordable, and accessible food!
So the idea of this healthy little snack or breakfast is to elevate the standard apples and peanut butter to something with a little more flavor, a little more texture, and a little more pizazz. (Also, that might be my new life mission statement.)
Healthy Peanut Butter Apple Stacks: How to Slice the Apples
Ok, don’t over-think this one! Slice them as thin as you can, ideally about 1/4 inch discs. You can easily remove or cut out the seeds.
What kind of apples? I used a mix of apples, and I would recommend using your favorite varieties. Any variety of eating apple will work fine, you just don’t want a mushy baking variety.
My personal favorite is a tart apple like a granny smith. And as long as I’ve got your ear about apples, I like to tell anyone who will listen that the honeycrisp apples were developed at the University of Minnesota (where I went to college, and I’m obviously really proud). Did you know that they are the 5th favorite apple in the US?
Healthy Peanut Butter Apple Stacks: Topping Ideas
This is the fun part! The toppings can be as simple or as complex as you want them to be. Here are a few ideas, and they should be items that you already have in your pantry.
- chopped nuts (peanuts, almonds, walnuts, pecans)
- shredded coconut
- fresh or dried fruit
- hemp seeds
- chia seeds
- crushed cereal
- dark chocolate chips (obviously Demi’s favorite topping)
- sprinkles
And then you just slice the apples, spread them with peanut butter, and sprinkle, sprinkle, sprinkle!
If you have kids, let them go wild and top their own. Or if you think that they’ll only add the chocolate…well maybe you should help them diversify with their topping choices. 😉

Instructions
- Carefully slice apples into thin slices, working from the bottom up.
- Remove any seeds or tough parts.
- Spread with 1-2 tsp. peanut butter per slice.
- Top with desired toppings.
