goat cheese-stuffed bacon-wrapped dates

Rate This Recipe

I don’t even like dates.

I mean, I didn’t like dates until yesterday. Somehow though, when they are stuffed with creamy goat cheese and wrapped in salty bacon, I kind of changed my mind.

The sweet, salty and creamy flavors all come together perfectly for an easy, yet fancy appetizer that clocks in at about 100 calories per date.

They can be assembled ahead of time and baked when you need them, perfect for a fun party appetizer or you know, an afternoon snack for one.

I’ve been obsessed with the goat cheese + tempeh bacon combo lately – love that goat cheese is easier on the belly than the regular stuff! Like you, I’m not a huge date fan, but if there’s any combo that I’m willing to try to convert me to loving them, this is it πŸ™‚

YUM! So I don’t really like bacon (don’t shoot me) but I loooove bacon wrapped dates. I stuff mine with goat cheese and a 1/2 of a pecan and then soak in balsamic vinegar before baking. Yum!

I’m so far behind, I had never had a bacon wrapped date before a few weekends ago. Wow, it is crazy how the date almost melts. You just made it ten times better with the goat cheese!
