I don’t even like dates.
I mean, I didn’t like dates until yesterday. Somehow though, when they are stuffed with creamy goat cheese and wrapped in salty bacon, I kind of changed my mind.
The sweet, salty and creamy flavors all come together perfectly for an easy, yet fancy appetizer that clocks in at about 100 calories per date.
They can be assembled ahead of time and baked when you need them, perfect for a fun party appetizer or you know, an afternoon snack for one.
Goat Cheese-Stuffed Bacon-Wrapped Dates
Prep Time: 10 min
Cook Time: 20 min
Ingredients (8 dates, 4 servings)
- 8 fresh dates
- 4 slices bacon
- 4 Tbsp goat cheese
Instructions
Pre-heat oven to 350 degrees.
Slit the dates and remove pit.
Cut the bacon slices in half.
Stuff about 1/2 Tbsp of goat cheese into dates.
Roll dates in bacon.
Bake for about 20 minutes.
Turn oven to broil for 2 minutes to brown bacon if necessary.

I’ve been obsessed with the goat cheese + tempeh bacon combo lately – love that goat cheese is easier on the belly than the regular stuff! Like you, I’m not a huge date fan, but if there’s any combo that I’m willing to try to convert me to loving them, this is it 🙂

YUM! So I don’t really like bacon (don’t shoot me) but I loooove bacon wrapped dates. I stuff mine with goat cheese and a 1/2 of a pecan and then soak in balsamic vinegar before baking. Yum!
