I’ve mentioned it before, but I basically spent my maternity leave on the couch with a baby attached to me and either the Food Network or Bravo on in the background. This was especially interesting for a few reasons. One because I had forgotten how much I loved the Food Network. I feel like no matter what the show, I learn interesting tidbits or techniques that come in handy when I head into the kitchen. The other because having Bravo on with my parents in the room is just hilarious. You see, they can get into the Food Network, but Bravo is just not for them – they are more the PBS type. I know, it always makes me feel bad about my life choices too. But I must say, they are troopers and the comments that came from my mother during her first housewives show deserve it’s own show!

It’s safe to say that the educational time with Giada and Ina have come in really handy when it comes to getting food on the table.

Take this fruit soaked oatmeal for example. It’s nothing earth-shattering, but the technique is a game-changer. Four simple ingredients are turned into a decadent breakfast, quick enough for weekday mornings, but tasty enough for slow weekend ones, too. Thank you, Ina!

How to Make Fruit Soaked Oatmeal

You simply prepare oatmeal in a mixture of water and (whole) milk, and when it’s done cooking, stir in sliced bananas and some dried fruit. Use whatever fruit you have or love – we used a combo of cherries, cranberries, golden raisins, and blueberries.

You let everything soak together for a few minutes and the fruit plumps up meaning every bite is studded with sweet fruit and creamy oats.FRUIT SOAKED OATMEAL, it’s a thing and it’s worth waking up for.

Ingredients

Scale
  • 2 cups old fashioned oats (not quick-cooking)
  • 2 cups water
  • 2 cups milk (preferably whole)
  • pinch of salt
  • 2 bananas, sliced
  • 3/4 cup dried fruit


Instructions

  1. Over medium heat, bring water and milk to a simmer.
  2. Add in oats and salt and cook over a low simmer for about 3-4 minutes, stirring occasionally.
  3. Remove from heat and stir in sliced bananas and dried fruit. Cover and let sit for 3-5 minutes, until dried fruit is plump.
  4. Divide into four bowls and serve.

Notes

I think the fruit adds plenty of sweetness, but add a drizzle of maple syrup or honey if desired.

Top with some chopped nuts or greek yogurt on the side for an extra boost of protein.

      Hmmm, they aren’t labeled as quick-cooking or instant but the definitely are NOT steel cut oats, which do take a lot longer.
