If I had to choose a favorite vegetable (please don’t make me choose!) I think I would have to say french green beans. If you’re fancy, or you read a lot of Fancy Nancy like me, they are technically called haricot verts.
I’m a big fan of vegetables that are easy to prepare, plenty versatile, and of course, delicious. We should be eating them at every (or most!) meals, so it’s extra important that they taste good. If you are a parent, vegetables are probably something you think a lot about. Are my kids eating enough vegetables? Why won’t my kids eat vegetables? Will they EVER eat vegetables?!
And I get it. My #1 solution to this very common conundrum? Make vegetables delicious and irresistible! Seriously. I have more ideas on how to get kids to eat vegetables (coming soon!) but first and foremost, they’ve got to be tasty.
Mushy and overcooked vegetables need not apply. And today, I’m going to show you my three favorite easy recipes for french green beans! I’ll show you how to saute them, roast them, AND cook them in the air fryer.
Are french beans and green beans the same?
This is a really common question with a really simple answer: NO! French green beans ARE different from standard green beans and I’ll tell you how they compare. The french green beans:
- are thinner and longer in shape
- don’t have to be trimmed (this makes them quick and easy!)
- cook quicker
- have a little milder flavor (which may help the veggie-averse)
Easy French Green Bean Recipes
The prep work is minimized with french green beans, which is definitely one of the reasons that they are one of my favorites. Because they are thinner, they also cook quicker than regular green beans. Less prep = faster meals = happy mom.
How to Make Sautéed French Green Beans:
This is probably my favorite method for french green beans and the one I make the majority of the time.
Scroll down to the recipe card for the full recipe, but the premise is simple. Lightly steam in the microwave (optional) and then saute in a little butter or olive oil and lightly season. It takes about 10 minutes.
How to Make Roasted French Green Beans:
Just about any vegetable can be roasted, and I love the light char that roasting imparts – and let’s face it. Roasting vegetables is hands-off – it’s why I love sheet pan dinners like roasted chicken thigh sheet pan dinner and one pan sausage and veggies. Roasted veggies are best when they get a treatment with plenty of oil, a hot oven, and enough space on the pan.
- 1 lb. french green beans
- 2 Tbsp. olive oil
- 1/4 tsp. salt
Preheat the oven to 400 degrees F. Toss green beans in olive oil, season with salt and spread out on a large sheet pan. (You can line with foil for quick clean-up.) Roast the green beans for 15 minutes, or until they are starting to brown.
How to Make Air Fryer French Green Beans:
If you’ve got an air fryer, I hope you are air frying a ton of vegetables, it’s my favorite way to use my air fryer*. Air fryer green beans are the quickest way to cook them, they are done in 5 minutes. The only thing to note is that because you don’t want to crowd the air fryer, I recommend doing one pound in two batches.
- 1/2 lb. french green beans
- 1 Tbsp. olive oil
- pinch of salt
Air fry at 400 degrees F for 5 minutes.

Other Easy Dinner Sides:Print
1 lb. french green beans (or haricot verts)
2 Tbsp. butter
1/8 tsp. salt
Melt butter in large pan over medium high heat. When it sizzles, add in the french green beans.
Cook for 3 minutes, mostly undisturbed. Let them get a bit dark.
Add 1/3 cup water to pan and cover.
Turn down heat to medium low and cook for 3-4 minutes for tender crisp, 5-6 minutes if you want them softer.
Remove cover and season with salt.
Cook until all liquid has evaporated.
