I’ve had a recent obsession with Mediterranean/Lebanese/Israeli/Levantine cuisines lately. I cannot be stopped. My favorite restaurant? Zankou Chicken. (Trying Ta’eem next!) My favorite cookbook? Modern Flavors of Arabia. My favorite lunch? This fattoush salad.
Fattoush salad (for those of you who aren’t familiar) is a bread salad made with greens and vegetables and fried pita bread. This version is so flavorful – and colorful – from sweet tomatoes, persian cucumbers, fresh lemon juice and bright herbs. I took a shortcut by buying pre-fried pita chips, but you could also use baked ones from the store. Just don’t skip the pita chips – they truly make this salad!
Serve the salad alongside some chicken shawarma or a slab of feta and fresh olives for a true feast.

Oh man, this salad looks amazing! I just so happen to have the end of a bag of pita chips hanging out in my pantry…now I know what I’m going to do with them. Question: what’s the difference between a Persian cucumber and, say, an English cucumber? I’m assuming they’d be relatively interchangeable, right?
Emily
Yes, you could definitely use an English cucumber. They are pretty similar, but really small, so they have even less seeds!
Emily
Oh, and my Trader Joe’s has both organic and conventional persian cukes!

I love fattoush salads. Probably one of my top fans ever. I especially love a lot of sumac in it. Really makes a difference! However, you’re right – the pita chips are a MUST!

The fattoush is my fave salad at our fave metiteranian place in town. I would love to make one for myself. This looks incredible!

This sounds so fantastic! These flavors are some of my favorite and I bet it would be incredible with feta! That dressing would be good on just about anything!

This looks right up my alley! And I love to have found a recipe that actually includes za’atar–one of my favorite spices!
